Earl's Kitchen + Bar makes Lobster Cacio e Pepe ahead of food festival

Thanks for starting your morning with us. One of Plano's most anticipated food celebrations, returning to Legacy West. We say good morning to Chef Dustin Palmer with Earl's Kitchen and Bar. Good morning to you. Good morning. All right, so you're one of 30 restaurants participating in the annual Food and Wine Festival. This is a huge deal. Yes, yes, we're super excited. Yeah, and I know for a lot of people it's the fun and getting to taste all the wine and the food and all that, but you guys are going for the award, right, the People's Choice Award. We are, we are. That's the big deal. So what's that all about? How does that work? Well, everyone comes in and they vote on who their favorite is and that's why we're looking to secure your vote. Yeah, you bribe them with food, basically, that's what you do, right? What are you making for us this morning? Today I'm going to be making our lobster cacio e pepe. Ooh. And this is something that's on the Earl's menu? This is on the Earl's menu, yes. So this is one of our newest additions. Okay, what do we start with? Okay, we're going to start with cracked peppercorns. We've got about a teaspoon there of cracked peppercorns. We're just going to toast them off. Yeah, a little smoky here. And then we're just going to add a little bit of butter to help toast those. Toast the peppercorns. Okay. That smells good. Right? And we're just going to add a little bit of our pasta water in here. So this is just the water that we've blanched the noodles in. Okay. And then these are bucatini noodles. So we're going to go ahead and add those in. And then this is our sauce. It looks a little thick right now, but it's really just Parmesan cheese and... Parmesan cheese in the pasta water. Oh, really? That's really all it is, yeah. Oh, yum. So we'll soak that right in and just kind of mix this all up. Make sure I don't splash anyone. Delicious, as you're mixing that up there. Festival. It is. I mean, it goes from noon until six at Legacy West. You guys take over that whole area there. There's food, there's wine. There's, of course, the shopping that's there to entertainment as well. And you get like all these different tastings and all the different food. And I do think people really enjoy just seeing so many different places that, you know, they're at one location. Yeah, it's a great opportunity to sample a few different dishes, few different items from each place. So Smells so good. How much of this will you make? We'll go through a few of these, yeah. A few? You're not making this, are you? No. Okay, so this is on your menu, and then are you making this? We are. Those are our Hot Nashville Chicken and Pickle Skewers. These are the chicken which are, I've heard, super popular. Yes, yes, those are a favorite. And those are only served on our happy hour menu. Okay, and how many of those do you think you're gonna make? Well, we've got a lot planned. Right, a lot, a lot, yeah. Okay, so you just threw in the lobster. Yep. We're gonna warm it up a little bit here and then we're gonna go ahead and plate. And you're gonna plate? Okay, I don't wanna get this too hot. You're okay. Good. Great. Yeah, ooh. And I'm ready for my cheese grating assignment too. And then I'm gonna need you to help me with some fresh pepper again here. Oh, fresh pepper and then more cheese maybe? Maybe, just a little bit, yeah. Here, I'll take the pepper. All right, that's a thing of beauty. Great, if you could just give it four or five good twists in there. There we go. Great. Perfect. You want to do a little extra cheese for him? Cheese. Yep. Oh, yeah. Oh, yeah. I mean, it's like we're a chef. Look at that. Perfect. Perfect. Well done. Perfect. Okay, that is beautiful.
