How to make super quick and easy gherkin recipe. Gherkins or pickled cucumbers as they are also known are easy to make with a simple brine, pickling spices, garlic and dill. It’s no secret that many things from your own kitchen are more flavourful, healthful, and nutrient dense than store-bought. Pickles are no exception. You end up with crispy, fresh, delicious pickles that have all the raw nutrients in tact. These are eaten a lot in Latvia! We have them as an entree with a shot of vodka before the starter and main course. Its very traditional in my family, all my friends that visited Latvia have done this ritual.
Hi guys, welcome to my channel Alla's Yummy Food.
Today I'm actually doing a very quick video for you guys
and it's a Russian entree, very very popular in Russia,
in Latvia, all over Eastern Europe and we usually eat this before
the main course with a shot of vodka. It's Russian pickled gherkins.
These will be half salted and they're done in one day so very quick
and you can just serve them the next day straight away.
Okay, I've got all my ingredients ready.
Now this is my grandma's recipe
and salted gherkins generally have so many different variations.
You can add a bit more salt, add a bit less,
use different spices, but I'll show you mine.
The gherkins are very crunchy and very good.
So let's get started.
The jars you have in the house,
this is about two and a half liters.
So the first thing we need to do is put chunks
of dill at the very bottom.
A little clove of garlic.
That's just to cover the bottom
and now we just start putting our gherkins inside there.
I've filled my jar with my yummy cucumbers and it's very important
to know that you have to use hot water instead of cold to fill the jar
because it will make the cucumbers get ready a lot faster
and also it will melt the sugar and salt
so it will just get around the whole jar into your cucumbers
and make them taste really really good.
For every litre of water I'm going to be using 2 tablespoons of salt.
I'm using large sea salt.
And one teaspoon of sugar.
I'm just gonna give this a mix.
Make sure it's dissolved.
And we just pour this into the jar.
See, it'll steam up
and you'll see that the cucumbers get really beautiful green color.
Close the
jar, leave it.
Exactly 24 hours and my
cucumbers have changed...
Well, the water has changed the color,
you can see it's not as clear anymore.
And when we open, you should have like a beautiful...
Oh, that really, really nice smell. I'm going to use my finger
and get one out just to show you the dill, just like that.
You see, it's beautiful.
Mmm, so crunchy and lovely.
Okay, so this is Russian entree, and what you
do in Latvia is you take a shot of vodka in one hand,
and then a piece of gherkin in the other hand,
and you down a shot, and then you bite a...
And you say Na Zdorovie, which means cheers,
or Priekā in Latvian, which means as well cheers.
So cheers
guys!
Great! See you all next Sunday! Bye!
