Hi guys, welcome to my channel Alice Yummy Food
and today I will share with you a really
delicious and super healthy recipe of how to make zucchini caviar.
Now previously I've done aubergine caviar,
if you are interested you can check it out,
but you guys requested for me to do this video
so I'm really really excited today and this
recipe has actually been passed to me by my grandma
so I really hope you enjoy it, stay
with me and let's get cooking.
The ingredients are very, very basic.
We've got two zucchinis, two carrots, some bay leaves, garlic.
I love garlic and it's really,
really healthy for you. And a bit of onion.
So the first thing we're going to do,
we're just going to chop the zucchini into three bits.
And I'm actually going to be using a really cool tool,
which I probably showed you in previous videos.
Thank you so much for watching my videos.
It's Master Slice and what it does, it just does all the work for you.
So it chops all the vegetables into cubes.
So all you do, you just put a bit of zucchini in there,
just press and it cuts into little cubes, you can see just down there,
so we're just going to repeat the process until all of them are done,
and then we take our half an onion and just do the same thing, okay.
When we actually lift it up, you will see that all
the vegetables are in this jar, so they're ready to go and cook.
The next thing we're going to do, once all the vegetables
are chopped up, look how easy and accessible that is,
we're just going to prepare our pan with some olive oil.
And we're just going to put all the vegetables inside.
Let's boil them.
We want to sweat them for a good five minutes once they're all in.
We're just going to add two bay
leaves and a tiny bit of water,
so just a couple of tablespoons just to make sure they're soft.
Okay, you see all the vegetables are nice and soft.
Now we're just going to add a bit of tomato puree, about a tablespoon,
so just like that.
And we'll just mix that in.
And we're going to add one can of chopped tomatoes.
And again, add some salt, pepper, spices,
a bit of sugar and it's good to go.
You need to stew it for another good 10-15 minutes.
Okay, as you can see, the caviar is already done.
So all the vegetables are very soft.
We're just going to take out the bay leaves out
and we're just going to blend it until it's nice and smooth.
So I'm just putting it all in my food processor
and blend it until nice and smooth.
So here we go, beautiful zucchini caviar.
Now I like to serve it with some bread.
So I've got some homemade white bread.
I actually have a video on how to make it and it's very, very easy.
So what we're going to do now,
just scoop a bit of that, put onto the bread.
You can use rye bread if you want.
It's really, really delicious.
Such a healthy, you know, starter.
A bit of salad.
Here we go.
Delicious.
Okay time to try. That is so good.
You can really taste all the vegetables.
It's got natural sugars and sourness and all combined so well together.
It's so smooth and it just feels healthy.
You know you can eat a plate of that and you just don't feel bad.
It's a really really healthy dish.
Guys thanks so much for asking me to make this. I really enjoyed it.
I hope you enjoyed it as well. Please give me a thumbs up. Share.
I'm also on Facebook and Pinterest. So I hope to see you all soon. Bye.
