Cake-Lure Base:
2 egg whites
70g sugar
1 tsp vanilla extract

The Rest:
33g Greek yogurt
17g cream or milk or water
2 tsp lemon juice
25g vegetable oil
2 egg yolks
80g flour
3g baking powder
Pinch of salt
2 TBL freeze-dried raspberries

Topping:
Freeze-dried raspberries as needed
1 TBL apricot jam
1 tsp water

For Cake-Lure Base: Place egg whites in a large bowl. Whisk to soft peaks. Add sugar in three stages, whisking to stiff peaks. Whisk in vanilla. Set aside.

Preheat oven to 340 degrees. In a small bowl, combine greek yogurt, oil, cream, lemon juice, and egg yolks. Whisk together flour, baking powder, and salt. Add to this mixture and stir until just combined.

Whisk a third of the cake-lure base into the batter to lighten it up. Fold in another third. Then, the final third. If you wish, you can carefully fold in the freeze-dried raspberries.

Divide batter between six muffin tins lined with paper. Bake for 20-30 minutes or until lightly golden on top. Allow to rest in the pan for five minutes, then remove to a cooling tack to cool completely.

To glaze: place jam and water in a small bowl. Microwave for 30 seconds to loosen it, then run it through a strainer. Lightly brush the top of the muffins and sprinkle on more freeze-dried raspberries.
