Ingredients: 1 12 oz bag frozen fruit, I'm using cherries 1 small apple 2 TBL or more of lemon juice 1 cup or less of sugar Pinch of salt 1 TBL butter
1. Peel and grate the apple. Add it to a wide non-stick pan along with your frozen fruit and about 1/3 cup of water. Add about a TBL of lemon juice. 2. Bring to a boil, cover, and cook on low for about 30 minutes. 3. Add about 2/3 cup to 3/4 cup of sugar and start to cook the fruit over medium heat. Once it thickens up, adjust the taste with more lemon juice or sugar. 4. Once it's thickened up to the desired consistency, add salt and butter and turn off the heat. Pour into jar and allow to come to room temp before storing in the fridge.
Hey go find a tree and shake it because we're making cherry jam.
For the jam that we're going
to make we're gonna need sugar, lemon juice, an apple,
a little bit of butter, and a pinch of salt.
You can leave out the butter
but you can leave out the salt I guess too but I wouldn't leave
out anything else. All we need is fruit
and I'm gonna use frozen because it's my favorite. You're
gonna need a 12 ounce bag.
I've done it with raspberries, I've done it with blueberries,
but it's the holidays so I'm using cherries.
Before we start, I'm gonna take this apple
and I'm going to peel it and I'm going to grate it.
Once you're down to the core, you can stop.
When it comes to making this particular jam recipe,
I like a wide open space,
this semi non-stick pan. I'm gonna start
by putting all of my fruit in the pot along with
about a third of a cup of water maybe
a little bit more it really doesn't matter let it come
up to a simmer all right once it's
at a low simmer add a little bit of lemon juice gonna
hold back a little bit for later
and of course our sugar wrong we're not gonna add the sugar yet
we are gonna hold back because our fruit has
to completely collapse that's gonna take about half
an hour but once it has come up to a simmer we can cover it
and cook it low and slow however
I'm gonna drop the heat a little bit,
and I will see you guys in half an hour.
All right, looks like our fruit has finally collapsed,
and what I'm gonna do now is I'm gonna mash it.
I don't like
my jams chunky,
I like them nice
and smooth.
Now you can add your sugar.
And see, I don't like my jams really sweet,
so I have a cup of sugar here.
I'm only gonna put in about two-thirds, maybe three-quarters of a cup.
Now I'm going to stir that in,
and I'm going to let this basically cook and thicken up.
Now that the sugar's added, it'll make everything gel nice.
I'm not leaving the room. Because we're
using a nice wide pan, it's going to evaporate all
the water off a lot quicker, and we're going
to get there sooner. So don't leave the room, alright?
Things can burn really quickly. Alright,
so I'm tasting it right now, and it's very sweet,
even though I didn't even use all that sugar.
I am gonna cut it with a little bit more of that lemon juice,
stir that in, and
continue cooking this.
At this point we're really just cooking it to thicken
it up. Alright for this batch two tablespoons
of lime juice was not enough
for me. I like my jam to really pop
and you only get that with citrus juice so
I'm gonna add a little bit more.
But the cool thing about it at this point is
it's almost done so you can add whatever you want
to it. You could add a little
bit more sugar, you could add some spices,
you can add flavorings, you can add more lemon juice,
you can add a lot of different things.
At this point, it's pretty sure that it's gonna set up,
but don't add any liquid.
If you add any liquid, that's gonna, you know, that might throw things
off again, but this, this is pretty good.
All right, this is just about done. It's starting
to sizzle, and I'm gonna show you a quick little test.
It'll recede, but it'll take a second,
so let me do that one more time. See, it's starting to recede.
I'm actually gonna turn the heat off,
and I'm going to do the last additions. Pinch
of salt, cold butter, and that can be it. But
if you have some homemade jam, this is raspberry,
I'm gonna mix it in because it only gets better,
and every subsequent batch,
you just add the last jam you made to the batch, and you'll have a
really, really tasty jam.
It kind of just, you know, you kind of have a forever jam.
Do make sure that the fruits kind of go together,
although most fruits go together.
Raspberry and cherries go very well together.
They're both red. So I'm just going to stir that
in, and that also helps cool down the pot.
All right, this is done. I'm going to let it cool
down for a while. All right, got a cool jam jar.
You don't need the label, but if you have a label
maker, might as well use it.
And I'm going to fill it up using a canning funnel.
All right,
the jam is still pretty warm,
so I'm gonna let it cool down all the way before I put it in the
fridge. Lid it up and store it in the fridge.
All right, now that it's done, keep it in the fridge.
These are not preserves. This is jam.
This is refrigerator jam. Uh, you're gonna want to keep
it refrigerated when it is not in use.
Uh, I did not process it. I don't bother with that stuff.
It's a little bit too Little House on the Prairie for me,
but guess what? This will last in the
fridge for two weeks, maybe a month.
I never have it last that long because I eat it. There's a lot
of cool stuff you can do with it,
stuff that I hope to show you in future videos, but here's
the way I like to eat it. This is a piece
of sourdough toast that I smeared some mascarpone
cheese on along with some of my freshly made jam.
If this sounds familiar to you, it's also how I
eat my scones, but I'm out of scones, so I use sourdough bread.
And here's a cool trick you can
do I made some black tea and I sweetened it
with a big spoonful of jam Russian style both of these
things are very tasty indeed that's pretty good
but if I'm being honest it's pretty good right
out of the jar yummy if you like that check out
