This homemade pasta recipe is simple and delicious! It only has a few ingredients and is definitely a 30 minute meal!
You guys are in for a treat. I am making pasta today. I love pasta. I probably eat pasta
at least two times a week and I got a bright idea like why not start making my own pasta.
So I have this hand pasta machine. I'm gonna roll out some pasta. I'm gonna cook it fresh
on the stove and it's going to be absolutely delicious. Let's make this pasta. Pasta has
very few ingredients. Three quarter cups flour, an egg, some salt, a little bit of water just
in case I need it. A little bit more flour. I am going to start by putting my three fourths cup
flour on the counter and then you're supposed to make a little hole. This is what they do on TV.
So we're gonna make this little hole. Crack my egg in the hole.
I love brown eggs. To me they just taste delicious. I'm gonna get a little salt,
just a little bit. Gotta season it. And then I'm just going to mix my egg.
And then as I'm mixing the egg, I am going to start incorporating some of the flour
into this. And then hopefully this will turn into a beautiful pasta dough. Let's go.
I think I see it. I think I see it beginning to take some shape. Okay, I'm done with the fork.
I just got to get my hands in it. I got to get my hands into it. So let me just dive on in here.
All right. Okay. Okay. It's feeling a little squishy, but not too much I can't handle. Okay,
I think it's coming about. Now this should be enough pasta. It should be enough pasta
for two people. I don't know, because I love pasta enough. I might just go ahead and make
this one serving. That's all I'm saying. Now if the pasta dough gets a little tough,
that's what the water is for. But right now I'm just going to go ahead and knead this.
Don't keep kneading it. You got to put your elbow, you know, I'm on my tippy toes. You
put all your weight into it. I'm too handy. Okay, I'm too handy. I got my little pasta ball.
I'm going to take it, go ahead, cover this good ball. Let it sit for 20 minutes.
My dough has been resting. Let me put a little flour on here. My dough has been resting.
So I am going to divide this into four equal parts. It's time to roll it out. All right.
Let's start with this little one. This is my pasta machine. It is on the highest setting.
Going to crank it. All right, let's see here. Come on. Come on out here. Come on out here.
Let me go ahead and put a little bit more flour on there. Come on. Come on out here.
There we go. There we go. There we go. Come on. I'm supposed to put it in thirds.
Put that back in here. Come on out here now. Come on. All right, let's get it.
Put it in thirds again. Come on. Come on out here. Quit playing.
So I'm going to keep doing this. I'm going to do this, maybe roll my sleeves up
once more, once or twice. And then I am going to put this on a smaller setting.
And then it's just going to get rolled all the way out.
Look at this. This is awesome. Come on. Come on out here now. Quit playing. Quit playing.
Come on out here. Let me do it one more time. All right. So now I'm going to make this
a smaller setting. Oh, two is a little skinnier. All right. There we go.
Let me put a little bit more flour on here. Make it a little thinner. There we go. Come on pasta.
Come on. Why are you playing with me? So this is really, really easy. You put it in here and you
just pull. We're just going to run this through until it gets thin enough to go to the next
setting. So I'm going to continue to put this through the settings all the way down to, this
goes all the way up to nine. I'm going to go all the way up to seven or eight to make it thin enough
to cut my fettuccine. This is my pasta cutter attachment. I can do spaghetti or fettuccine.
Just going to attach this to there. Let's take the knob out. We're going to put it in here.
Hopefully I'll get some good fettuccine sheets. Look at that. Yes. Come on fresh pasta.
Okay. All right. All right. Let me get this together. I'll back that up.
Fresh pasta. I have this stand that I'm just going to sit there and dry.
Let's go fresh pasta. I'm so excited. I can't wait to cook it and eat it. Time to cook.
Now I have a pot of water boiling. Now once it comes to a boil, I am going to generously
salt this water because this is how we season the pasta. You are not going to add olive oil.
No, that is going to prevent any sauce that you want in your pasta from sticking.
Salt the pasta water. This is fresh pasta, so it should not take very long to cook.
We are just going to cook our fresh delicious pasta in this water.
This has been cooking for approximately three minutes. Let me show you. You want
your pasta to have a little bite to it, to be al dente. Let's see here. Oh my goodness.
Yes, it tastes good already. You want to know why? Because I've already seasoned it. I seasoned
the pasta with salt. This is delicious. I'm just going to remove my pasta from the water because I
don't want it to continue to cook. We are going to make a sauce for this pasta. Not only am I going
to take some of the pasta, I'm going to reserve a little bit of this pasta water for the sauce.
I want a nice, simple, light sauce for this pasta because it's so fresh and delicious.
I'm going to start with some EVOO. All right, maybe about two tablespoons, two to three
tablespoons. This is going to be the basis of the sauce. I'm going to add some
freshly chopped garlic. I'm going to let this garlic saute. Garlic cooks really, really quickly,
so you don't want this to burn. I do want the oil to get nice and fragrant
with that garlic. The garlic is going to permeate through the oil.
Smells good already. Now to this, I'm going to add my chicken stock.
Yeah, that's getting nice and good and delicious. To this, I'm going to add a beautiful pasta
and that reserved pasta water that I told you about. The pasta water, we're going to add that
because it has natural starches from the pasta that is going to make your sauce nice and thick.
Yes, turn this down. Delicious. To this, black pepper. I like black pepper, lots of black pepper.
A little salt, just a little bit because we already seasoned it. Lemon juice. Lemon juice
is going to make it nice and bright, give you that pop of flavor that you need. Yeah.
You can't tell me that that don't look good. You can't tell me because I'm not going to believe
even if you did say it didn't look good. You hate me and I'm not going to believe you,
but we're not done. Now I grated this myself. This is fresh Parmesan. This is going to add
that sharpness that I really like, the deliciousness. Let's go ahead and mix that.
We're mixing everything together. It's nice, light, beautiful, delicious sauce.
I can't wait to eat this. Call me greedy if you want to. I can't wait. What are we missing?
What are we missing? Just a little herb. Just a little herb. Just a little fresh herb. That's
fresh. Pasta. It's time to eat.
