It's soup season and this creamy chicken and wild rice soup is perfect for you to cuddle up with
by yourself or with your boo. Let's make some. We're going to start by chopping our vegetables.
We're going to chop one half of a sweet onion or you can use white onion. We're going to chop
two celery stalks and also two whole carrots with the skin on because that's where the nutrients
are. We're also going to chop four garlic cloves. For this recipe we are using one large chicken
breast which is approximately one pound. I am going to chop with the lines and then I am going
to chop the opposite way to form my cubes. Once you have the chicken breast all chopped up we're
going to season with salt and pepper. We're going to add this to a hot pot with approximately one
tablespoon of olive oil and we are going to brown our chicken. We just want to cook it until it has
a little bit of color. Then we are going to add those beautiful vegetables that we worked so hard
on and we're going to saute the chicken with the vegetables until the chicken is fully cooked and
the vegetables are soft. It should be smelling amazing. To this we are going to add one fourth
cup of flour and we are going to brown the flour. We want the flour to be nice and cooked. This is
going to add the thickness to the soup that we are looking for. After the flour is cooked we're going
to add one cup of wild rice and we're going to saute that. Then we're going to add four to five
cups of chicken stock. Mix that around and it's time to season. I am going to season this generously
with some salt, some black pepper, and some fresh thyme. You're going to mix that all in. We're going
to cover and allow the rice to cook for approximately 20 minutes. Once the rice is fully
cooked and it's fluffy you can tell and also taste it. You don't want your rice to be crunchy.
After it's fully cooked we are going to remove those stems of thyme because those are not edible
and then we're going to add one half cup of heavy cream and we are going to adjust our seasonings.
I'm going to add a little bit more pepper and just a tiny bit of salt. We are going to cover and let
this simmer for approximately 10 to 15 more minutes and look at that a delicious thick creamy soup.
The only thing left to do is serve this up. Bon Appetit. Let's eat.
