The secret to this goulash lies in the intensely roasted onions, the seared beef, red wine, and the long, slow cooking time. In the end, I remove the tender meat and puree the sauce. This makes it wonderfully creamy and thick, without any flour. Then, the meat goes back into the dark goulash sauce and is seasoned again with salt and pepper.
In my case, the meat from the young bull was wonderfully tender after about 1½ hours. Together with fluffy rice, it creates a simple, hearty meal that's perfect for a cozy lunch or dinner with the whole family.
