☕ Cinnamon Coffee Cake

Ingredients

For the Cake

Salted butter – 110g (½ cup)
Sugar – 175g (¾ cup + 2 tablespoons)
Vegetable oil – 30ml (2 tablespoons)
Eggs – 2
Natural yogurt – 100g (about 7 tablespoons)
Plain flour – 200g (1⅓ cups)
Baking powder – 1½ teaspoons

Coffee Mixture

Instant coffee – 1 tablespoon
Warm milk – 2–3 tablespoons

Cinnamon Sugar Filling

Cinnamon powder – 2 teaspoons
Brown sugar – 2–3 tablespoons

Optional Glaze

Powdered sugar – 60g (½ cup)
Milk – 1-2 tablespoons
Instant coffee – ½ teaspoon

Equipment

Measuring cup size: 240ml
Baking pan: 20 × 20 cm (8 × 8 inch)

Bake in a preheated oven at 170°C (350°F) for 30–35 minutes.


Method

Prepare the Coffee Mixture

In a small bowl, dissolve the instant coffee in the warm milk. Stir until smooth and set aside.

Prepare the Cinnamon Sugar Filling

In another small bowl, mix together the brown sugar and cinnamon powder until well combined. Set aside.

Make the Cake Batter

In a large mixing bowl, cream the butter and sugar together for about 2 minutes, or until light and creamy.
Add the vegetable oil and whisk for 1 minute until well combined.
Add the eggs and whisk for about 2 minutes, scraping down the sides of the bowl as needed.
Mix in the vanilla extract.
Add the yogurt and whisk for 1 minute until smooth and creamy.
Sift the plain flour and baking powder directly into the bowl.
Give the batter a gentle mix by hand until almost combined.
Pour in the prepared coffee mixture and gently fold until the batter is smooth and evenly combined. Avoid overmixing.

Assemble the Cake

Pour half of the batter into the lined baking pan and spread it evenly.
Sprinkle the cinnamon sugar mixture evenly over the batter.
Carefully spoon the remaining batter over the cinnamon layer and gently smooth the surface.

Bake

Bake in a preheated oven at 170°C (350°F) for 30–35 minutes, or until a skewer inserted into the centre comes out clean.
Add the Glaze (Optional)
If using, mix the powdered sugar with the milk and a little instant coffee, until smooth.

While the cake is still warm, drizzle the glaze evenly over the top.
Allow the glaze to set slightly before slicing.
Serve warm or let the cake cool completely.
