Ingredients
Apple Filling
• Butter — 30 g | 2 tbsp |
• Granny Smith apples, peeled and diced — 300 g | about 2½ UK cups | about 2½ US cups
• Braeburn apples, peeled and diced — 300 g | about 2½ UK cups | about 2½ US cups
• Light brown sugar — 60 g | 4 tbsp | ⅓ UK cup | ⅓ US cup
• Ground cinnamon — 4 g | 2 tsp | ⅔ tbsp
• Ground nutmeg — 0.5 g | ¼ tsp
• Vanilla extract — 5 ml | 1 tsp
• Lemon juice — 15 ml | 1 tbsp | 3 tsp
• Salt — 1/2 tsp
• Cornflour (cornstarch) — 10 g | 1 tbsp | 3 tsp
• Water — 30 ml | 2 tbsp | 6 tsp
Assembly
• Large flour tortillas — 4
• Egg, beaten — 1
Cinnamon Sugar Topping
• Demerara sugar — 30 g | 2 tbsp | ⅛ UK cup | ⅛ US cup
• Ground cinnamon — 2 g | 1 tsp
Preheat your oven to 200°C (180°C fan) / 400°F.
Bake for 20–25 minutes until: deep golden brown and crisp
