#PotatoCups #StuffedPotatoes #PotatoRecipe
Just mashed potatoes and add ground beef! My family loves these crispy batter treats!
Press the potatoes into muffin tins and shape them into crispy golden potato gems! Each muffin is generously filled with savory seasoned ground beef, onions, bell peppers, and melted cheese, then baked until the edges are crispy and the top is frothy and golden brown. This is the easiest and tastiest dish – a hearty potato and beef meal the whole family will love.
Total time:
Approximately 1 hour 15 minutes. Preparation time approximately 30 minutes, pre-bake 20-30 minutes, final baking 10-15 minutes, plus resting time.
Servings:
Makes 6 cups of potato muffins, enough for 3-4 people.
Customize to your liking!
Use ground beef, ground pork, ground turkey, ground chicken, or both. Any cheese that melts easily will work – Gouda, Cheddar, Mozzarella, or Monterey Jack. Want it spicier? Add dried chilies. No bell peppers? You can substitute with persimmons or add onions. The main potato flours are emphasized – exploit them with any filling you love. Adding a sour cream topping will help them add extra warmth and deliciousness.

Quick Instructions:
Potatoes:
Cut potatoes in half, add water and salt, and cook until softened. Drain well, dry thoroughly, and steam dry, then set aside until manageable. Grease a muffin tin and place the potato pieces down, skin side down. Brush a layer of oil onto a sturdy glass surface and gently press each piece into the muffin. Shape the walls and create the rim. Boil a few more to fill in any gaps.
Seasoning:
Mix melted butter, olive oil, smoked paprika, garlic powder, salt, and pepper. Brush the entire surface of the mixture, both the ingredients and the cocktail, with a brush. Preheat oven to 200°C (400°F) for 20-30 minutes, or until golden brown and crispy.
Beef:
Sauté the ground beef in a hot pan until golden brown, season with salt and pepper, then set aside. Meanwhile, sauté the onions in butter until softened. Add the bell peppers and cook until tender. Add the garlic, tomato paste, thyme, and dried chilies. Stir for 30-40 seconds until fragrant. Return the beef to the pan, add the broth, Worcestershire sauce, and Dijon mustard. Simmer until thickened. Add the fresh parsley, turn off the heat, and mix well. To help the filling hold its shape better, add some shredded bacon while still hot.
Preparation and Baking:
Fill each pre-baked parsley with the filling and press down firmly. Sprinkle with cheese and a little oregano. Bake for 10-15 minutes until the cheese is soft and golden brown.
Let cool and remove:
Let them rest for 10-15 minutes to allow them to solidify and be easily removed. Serve with sour cream and a fresh salad – the sour cream will make the dish even tastier.
