I learned this amazing brioche technique from a French grandma, and it completely changed the way I bake bread at home. The secret is a special cooked dough method that creates an incredibly soft, fluffy texture and keeps the brioche fresh for days.

Ingredients
Yeast Starter
11 g dry yeast (2 tsp)
1 tbsp sugar
4 tbsp flour
250 ml warm milk (1 cup)
Cooked Dough (Tangzhong Style)
4 tbsp flour
5 tbsp sugar
1 tsp salt
60 g butter (¼ cup)
250 ml boiling water (1 cup)
Main Dough
1 egg
Remaining flour to total 700 g (about 5½ cups)
150 g raisins (1 cup)
Additional 100 g flour (¾ cup) for incorporating raisins
Topping
Milk for brushing
White sugar or brown sugar for the crust
Directions
Combine yeast, sugar, and flour in a bowl.
Add warm milk and mix until smooth.
Let the starter rest for 15 minutes.
In another bowl combine flour, sugar, salt, butter, and boiling water.
Mix quickly to create a smooth cooked dough.
Add the egg to the yeast starter.
Combine the cooked dough with the starter.
Gradually add the remaining flour and knead until smooth.
Cover and let rise for 1½–2 hours.
Toss raisins with flour and knead them into the dough.
Divide the dough into 10 equal pieces.
Shape, rest, and form into rolls.
Place into baking pans.
Brush with milk and sprinkle with sugar.
Bake for 30 minutes at 180–200°C (355–390°F).
Cool slightly and enjoy!
