Ingredients:
Desiccated Coconut 75g (¾ cup)
Sugar 150g (¾ cup)
Butter 110g (½ cup)
3 Eggs
Plain Flour 175g (1 cup, 3 tablespoons)
Baking powder 1 teaspoon
Coconut Milk 60ml (¼ cup)
Vanilla extract 1 teaspoon
Melted Chocolate for topping
Toasted Desiccated Coconut a handful
Measuring cup size - 240ml
Baking pan 20x20 cm (8x8 inch)
Bake in a preheated Oven at 170c (338f) for 30-35 minutes
Method:
In a large bowl, add the butter and sugar.
Whisk for about 2–3 minutes until light and creamy.
Add the eggs and whisk again for about 1 minute until well combined.
Add the plain flour, baking powder, and desiccated coconut.
Mix lightly.
Pour in the coconut milk and add the vanilla extract.
Whisk for about 20 seconds until combined.
Give the batter a final mix, making sure everything is evenly incorporated.
Pour the batter into a lined 20 × 20 cm (8 × 8 inch) baking pan.
Bake in a preheated oven at 170°C (338°F) for 30–35 minutes, or until a skewer inserted into the centre comes out clean.
Once baked, let the cake sit for a few minutes, then poke holes all over the warm cake using a skewer or fork.
Pour the melted chocolate evenly over the warm cake, allowing it to seep into the holes.
Sprinkle it with toasted desiccated coconut.
Allow the chocolate to set slightly before slicing.
