Hi and welcome to Spice and Pens. I'm Roland. Today I'm showing you the ultimate lazy person
meal. Mui choy, pork rice or mei cai zi rou fan. We are skipping the separate pots and long
braising time. Just toss in your pork, your mui choy and rice all in the rice cooker.
Heat start and let the machine do the magic. It's a one pot wonder that's packed with flavor.
Are you ready? Let's start cooking. I'm going to cook my dish using my rice cooker.
So if you have open lid cooking, best if not you can use the steam function or any cooking function
and then just let this heat up. Drizzle in just a little bit of oil. Add in one whole piece of
cinnamon bud, slightly longer than your finger. Add in two pieces of star anise,
one thumb size young ginger smashed. We'll fry this until we can smell the fragrance coming
out from here before we add in the other ingredients. As the rice cooker does not
heat up that fast, this might take a little bit longer than compared to you cooking this
over the stove. But using a rice cooker will be so easy. I've cooked this three days in a row and
my family absolutely loves it. Very fragrant, very nice and it's easy to do. We'll just let the
aroma rise from all these beautiful ingredients that we've added in just now. This will take a
little while. Once I'm done, I'll show you the next step. Once you can start to smell the fragrance,
we'll add in our shallots. Three whole pieces of shallots chopped and then you just add them in.
Mix them up well. Fry them until they're a little bit translucent just to release the flavour.
I just love cooking one pot meal. It's so easy, so simple. Just put it in, put the lid on, put all
the ingredients in and you have a delicious meal after that. Once you can smell the beautiful
fragrance from the shallots and it's a little bit translucent, we'll add in our garlic. Five cloves
of garlic chopped, put it in. Same thing, mix them up well. We'll add in our other ingredients when
we start to smell the beautiful fragrance from the garlic. Remember to move them around, don't burn
them. Wow, smelling really really good. Another about 10 seconds more before we add in our pork.
Once the fragrance is all out, we'll add in our pork. I'm using Iberico
collar shabu-shabu, very thinly sliced already. I just cut it into half. This is a total of 500 grams.
Put everything in. Of course you can use normal pork if you want to but my family just loves
Iberico pork. It's just so nice. Okay, mix them around. We just need to fry them until we no
longer see any redness on the meat. Remember to spread out the pork so that they'll be cooked
faster and easier. This might take a little while and I'll show you how they look like in a while.
In every 10-20 seconds or so, just turn them or just mix them up again. Make sure they have
contact with the pot. We want to get the fat out of the pork so that our rice is really really
fragrant. If a rice cooker doesn't allow you to do open lid cooking, you can actually cook all this
over your stove and then just transfer everything back to your rice cooker. I can already smell how
good this is. The pork is almost done. Now we'll add in white pepper. Add in a few dashes of white pepper
as well as one teaspoon of five spice powder. Mix them up well. The pork is basically cooked already.
Now we'll add in our mei cai. I have with me over here 200 grams of mei cai, the sweet version and
I've washed them and soaked them in water for approximately two hours and then I chopped them
into small pieces like this. So add everything in. Mix them around for a minute or two just to
evaporate the excess moisture. Get the mei cai in contact with the fats from the pork. This is going
to be so good. I can already smell how delicious this will be. Once you mix them well, we'll add in
our rice. I'm adding in 510 grams of jasmine rice. Make sure you wash them and drain them dry.
Or rather four cups of the cup that comes with the rice cooker. Just add everything in.
Now we add in our seasonings. Two and a half tablespoons of oyster sauce. Pour everything in.
One tablespoon of light soy sauce. For that beautiful dark hue, we are adding in two
tablespoons of dark soy sauce. I'm using the premium dark soy sauce so this is not
that salty. If you are using the regular type, please just reduce the dark soy sauce.
Mix everything up. Let the rice come in contact with the fats. This is how delicious it will be.
Very very good. Now four cup rice can easily fit six person. For small eater, maybe even eight.
So if you are using lesser, just divide accordingly. Okay once you mix them up well,
we add in water. Same thing. Measurement be four cups of water. Move them around a little bit.
Level them up. Push down the rest of the rice that is on the side of the rice cooker.
Now all we have to do is just close the lid. Change to white rice or jasmine rice cooking.
I'm using jasmine rice so I'm just switching over to jasmine rice and we'll just cook this.
Once it beeps, that means it's time for our lunch. I'll see you back in a while.
The rice is cooked. Now let's have a look. Oh smelling so nice. Now all we have to do is just
sprinkle some spring onions on top and now it's time for lunch.
And that's how we cook this dish. It's super delicious and I hope you try it.
