Hi everyone, welcome to Cooking with Lin.
Did you try my Singapore noodles yet?
Today I'm going to share with you another version of stir-fried rice noodles,
Chow Mee Fun.
Rice noodles in Chinese is?
Mee Fun.
Yes, Mee Fun.
Let me show you the simple ingredients.
Here's my rice noodles.
That's what I used for Singapore noodles.
And I soaked four dried shiitake mushrooms.
You can use fresh shiitake mushrooms.
And we need two eggs.
That's our protein.
Just add a little bit of salt.
White pepper powder.
As I always do.
And beat it.
So that's our eggs.
And I have four cloves of garlic.
Just slice it.
And I have two green onions.
Always separate the white from the green part.
And just slice it like this.
That's our green onions and carrots.
This is a big one, I'm just using half.
Save the other half.
Just cut into slices first, like this.
Then we cut into slivers, like this.
That's our carrots and four mushrooms.
I soaked them in warm water about 30 minutes.
Or you can wait till they're soft, like this.
Slice it.
That's our mushrooms.
And I'm going to use oyster sauce.
Just add about a tablespoon.
And add some water to dilute it.
So this way it will be mixed with the noodles easily.
And we're ready to cook.
Thank you, Mr. Cameraman, for boiling the water for me.
You're welcome.
So we're ready to boil the noodles.
That should be enough.
And just let this cook about two minutes.
After two minutes, our noodles are ready.
And I'm going to just rinse under cold water.
After rinsing the noodles, you can add a little bit of oil.
So this way, when we stir fry, they're not
going to be sticky together.
And we're ready to stir fry.
I'm heating up the wok to high heat.
Add some oil.
First, we're going to cook the eggs.
OK, now we take the eggs out.
Set aside.
Now we add more oil.
Wok likes oil.
And add garlic, white part of green onions,
and mushroom, carrots, a little bit of salt.
Cook about two minutes.
About two minutes, let's add our noodles.
And now add our eggs.
Now let's add the oyster sauce and green onions.
Let's try a little bit.
Wow, delicious.
Now we just drizzle some sesame oil.
And our chow mein fan, it's ready.
Are you ready to try?
I'm ready.
It looks great.
Looking good, right?
Vegetables, eggs, noodles.
Can I get some for you?
Yes, please.
Get some goodies for you.
Enjoy.
My favorite.
Noodles.
So flavorful, right?
Mushroom.
Mushrooms are awesome.
Eggs, delicious.
I love eggs.
Wow.
This is excellent.
Still very light, right?
Oh, it's really good.
If you are vegetarian, you can skip the eggs.
And you can use the vegan oyster sauce.
They have a vegan version or your soy sauce.
I'm going to list my Singapore noodles
in the description box.
