The best recipe for marzipan cake! This trick with the filling is simply ingenious!
An airy, aromatic and incredibly delicate pastry that delights from the very first bite. The yeast dough becomes soft and elastic, rises beautifully and remains loose and lightly layered after baking.
Inside is a delicate filling of whipped egg whites with sugar, almonds and fresh lemon zest, which gives the pastry an elegant nutty-citrus note. A layer of sweet jam provides juiciness and a pleasant fruity acidity that perfectly complements the rich marzipan filling.
The golden-brown crust with crispy almond flakes and a touch of powdered sugar makes this pastry not only particularly tasty, but also visually very appealing.
This filled roll is perfect with morning coffee as well as for a cozy tea break in the evening. It tastes delicious both warm and completely cooled, and its delicate texture and full-bodied flavor will win over all lovers of homemade sweets.
Recipe:
500-550 g wheat flour (4 cups).
80 g sugar (≈ ⅓ cup)
20 g fresh yeast (or 7 grams dry yeast).
250 ml warm milk (1 cup).
2 egg yolks + 1 egg yolk.
50 ml vegetable oil (approx. 1/5 cup).
5-6 g salt (1/2 teaspoon).
For the filling:
100 g butter (approx. 1/2 cup)
2 egg whites
1 tablespoon vanilla sugar
70 g sugar (approx. 1/3 cup)
Zest of 1 lemon
250 g ground almonds (approx. 2 1/2 cups)
Mango-pineapple jam
For garnish:
Almond flakes
Powdered sugar
Knead the dough and let it rest for 60 minutes.
Prepare the cakes according to the method shown in the video. Brush with the egg-milk mixture. Garnish with almond flakes.
Bake at 180 °C (356 °F) for 40–45 minutes.
