These fluffy, golden-brown baked yeast rolls with a delicate quark filling are a real highlight for any coffee table. The airy dough becomes particularly soft and aromatic thanks to the combination of warm milk and butter, while the creamy quark mixture inside provides a pleasantly light, slightly sweet note.
What makes this recipe special is the frozen core of quark filling, which retains its shape during baking and gives the rolls a moist, almost dessert-like consistency. The whole thing is crowned with crispy almond flakes and a fruity cherry layer, whose fine acidity perfectly complements the mild sweetness.
Whether for breakfast, as an afternoon snack or as a special treat for guests – these rolls impress with their balanced texture and rich taste. Slightly crispy on the outside, soft and creamy on the inside – just as a successful yeast pastry should be.

Recipe:
500-550 g wheat flour (4 cups).
2 tablespoons of sugar.
20 g fresh yeast (1 oz).
250 ml warm milk (1 cup).
1 egg + 1 egg yolk.
80 g butter (3 ounces).
5-6 g salt (1/2 teaspoon).
For the filling:
300 g soft quark (ricotta, cream cheese) (1 1/4 cups)
80 g sugar (1/3 cup)
1 tablespoon vanilla sugar.
3 tablespoons of whipped cream.
1 egg
25 g cornstarch (3 teaspoons)
For decoration:
flaked almonds (optional)
Cherry jam:
200 g frozen cherries (1 1/3 cups)
60 g sugar (1/4 cup)
1 teaspoon starch
Knead the dough and let it rest for 60 minutes.
Shape the rolls as shown in the video. Brush with the egg-milk mixture.
Garnish with almond flakes. Cook some cherry jam and decorate the tops of the rolls with it.
Bake at 180 °C (356 °F) for 25–30 minutes.
