We just had to try it! You've seen it all over TikTok, and today on Snow Dogs Cooking, we're testing out the viral recipe that everyone is talking about: Pasta Caviar! Also known as Pastina or Pastini, this incredibly simple dish is the ultimate one-pan comfort food. We were looking for an easy dinner, and this creamy, cheesy, and lemony pasta seemed like the perfect thing to try.
Made with tiny Acini di Pepe pasta cooked in chicken broth and finished with butter, lemon, and lots of Parmesan, this dish has a unique texture similar to risotto. Is it worth the hype? ► 1 cup Acini di Pepe pasta
► 3.5 cups Chicken Broth (or broth of your choice)
► 2 tbsp Butter
► 1/2 cup Freshly Grated Parmesan Cheese (+ more for topping)
► A squeeze of fresh Lemon Juice (to taste)
► Salt & Freshly Cracked Black Pepper to taste
⭐ Variations & Customizations: ⭐
💡 Make it a Meal: This is a perfect base for adding protein like grilled chicken or shrimp, or veggies like steamed broccoli.
💡 Change the Broth: Don't have chicken broth? Vegetable broth, beef broth, or bone broth would also be delicious!
💡 Lemon Rice Soup Hack: For an even creamier, richer dish, whisk an egg and slowly stir it in at the end after you've removed the pan from the heat. It tastes just like our favorite lemon rice soup!
💡 IMPORTANT TIP: Cook your pasta for the time listed on YOUR box! We found this was the key to getting the perfect texture.
