The BEST Homemade Cinnamon Rolls! Ooey and Gooey!

It is finally time for redemption! After the disaster that was the expired refrigerated cinnamon rolls (we don't talk about the hockey pucks), we are conquering our fears and making homemade cinnamon rolls from scratch! You guys have been begging us to make these since we brought the channel back, and today is the day.

We are making a soft, yeast-based dough, a brown sugar cinnamon filling, and the most delicious homemade cream cheese frosting. Plus, we are testing out a viral internet hack for cutting the rolls that changes everything! Join Jess, Jamie, and the kitchen helpers for some baking fun.

Ingredients

The Dough
1 Cup Warm Milk (110°F)
2 and 1/4 tsp Instant Yeast OR Active Dry Yeast
(Instant Yeast, let dissolve, ACTIVE Yeast, let foam for 5 - 10 minutes)
2 Eggs (Room Temperature)
1/2 Cup Sugar
2 tsp Kosher Salt
1/4 tsp Baking Soda (Floof Powder)
5 Tbsp Softened Butter
4 and 1/2 Cups All-Purpose Flour

The Filling
3/4 Cup Brown Sugar
2 Tbsp Cinnamon
1/4 tsp Kosher Salt
1 Stick (8 Tbsp) Very Soft Butter

The Frosting

6 oz Cream Cheese (Softened)
1/2 Cup Softened Butter
1 tsp Vanilla Extract
1/4 tsp Kosher Salt
1 Cup Powdered Sugar
Splash of Heavy Whipping Cream (up to 1/4 cup)

Tips and Tricks for Success
🥣 Yeast Tip: If using active dry yeast, let it sit in the warm milk for 5-10 minutes until bubbly. If using instant yeast, just mix until dissolved.
🌡️ Temperature Matters: If your kitchen is cold (or you have a stainless steel bowl), run the bowl under warm water before starting so the cold metal doesn't kill your yeast activation.
🎨 The Friction Method: When spreading the butter and cinnamon sugar on the dough, use "friction" by painting it back and forth quickly to heat it up and spread it evenly without tearing the dough.
🍕 The Pizza Cutter Hack: Instead of rolling the entire dough log and squishing it with a knife, use a pizza cutter to cut strips of dough FIRST, then roll each strip individually. It makes perfectly round rolls!
❄️ Frosting Timing: If you want the frosting to look defined and pretty, wait 30 minutes for the rolls to cool. If you want it super melty and gooey, frost immediately out of the oven!

The Kitchen Helpers
🐕 The "Creamy Creamy Cheesy Cheesy" song was officially sung today! It is the only way to wake a sleeping husky who is tired from sledding.
🐕 Speaking of sledding, Kitchen Helpers 2 and 3 were exhausted from pulling the sled, while Memphis was tired from her impressive one-mile walk!
🐕 The "Cheese Tax" was paid in full with a little bit of cream cheese for the helpers.
🐕 Memphis tried her best to hypnotize the cinnamon rolls while we were rolling them out, but sadly, cinnamon is not for huskies!
