A SOFT cake with incredible rise... with a Colomba flavor! Quick and easy, with NO BEATING!
It's SOFT beyond belief, with the typical Colomba glaze 🐣
It's so quick and delicious!
Tip: You can also add chocolate chips or raisins!
Bake at 180°C (350°F) in a static or fan-assisted oven for about 35-40 minutes (I used the fan-assisted oven)
Ingredients: 22 cm mold
3 eggs
150 g plain yogurt
100 g sugar
50 g extra virgin olive oil (seed, olive, or melted butter)
250 g plain flour (or rice flour)
16 g baking powder
1 lemon
For the glaze:
80 g almond flour
2 tablespoons sugar
1 egg white
1/2 vial almonds
Crunched sugar
Almonds
