ZUHEROS, a result of the collaboration between the Ethnobotanical Museum of the Botanical Garden of Cordoba and the Museum of Popular Customs and Traditions of Zuheros, was recovered in 2004 for itsResearch and study all traditional agricultural techniques for cultivating einkorn, one of the first domesticated wheats in the Near East about 10,000 years ago.It was a unique opportunity to recover the entire process (cultivation, harvesting, milling, and craftsmanship) of this nearly extinct grain.
