The most delicate Christmas dessert without complicated ingredients! 🎅🍒 The perfect combination!
🍫 This chocolate cake with cherry filling and buttercream is one of the most delicate and delicious cakes I've ever baked! The recipe is simple, gelatin-free, and perfect for Christmas parties, dates, or simply for enjoying with coffee.
Recipe:

✅ Cherry filling:
200g pitted cherries (fresh or frozen).
Water – 60 ml.
Sugar – 60 g.
Lemon juice – 1 tsp.
Cornstarch – 15 g.
Cherry liqueur or rum – 1 tbsp (optional!).
Bring the mixture to a boil, stirring constantly. Simmer until thickened.
Allow to cool to room temperature.

✅ Sponge cake base:
Flour – 120 g.
Cocoa – 25 g.
Baking powder – 1 tsp.
Baking soda – ¼ tsp.
Salt – a pinch.
Stir the dry ingredients until smooth.

Eggs – 3 pieces.
Sugar – 100 g.
Vanilla sugar – 1 tsp.
Beat until frothy for 3-5 minutes.
Vegetable oil – 60 ml.
Milk – 100 ml.
Stir.
Sift half of the dry ingredients.
Mix carefully.
Sift the remaining dry ingredients.
Mix again.
Vinegar or lemon juice – 1 teaspoon (activates the baking soda).
Place on a baking sheet lined with parchment paper and smooth out.
Baking tray size: 30 × 40 cm.
Bake in a preheated oven at 170°C for 18–20 minutes. Let cool completely, remove baking paper. Cut out an even number of circles with a diameter of 5–6 cm (two per cake).

✅Vanilla cream:
Cream cheese – 250 g (e.g. Philadelphia, Almette Natural or Mlekovita).
Icing sugar – 40 g.
Vanilla sugar – 10 g.
Mix until smooth.
Cream (33–35% fat) – 250 ml (cold).
Gradually stir in while stirring constantly.

✅Impregnation: (Impregnation: water, sugar, cherry liqueur.)
100 ml water
1 tablespoon of sugar.
Bring to a boil until the sugar has completely dissolved.
1 tablespoon of cherry liqueur or rum (optional!).
Soak each circle with it.

✅Assemble: (We collect cakes.)
Spread a layer of cream onto the first cake layer (using a star nozzle or a spoon).
Add a spoonful of cherry jam.
Cover with the second cake layer.
Decorate the top with a spiral of whipped cream and sprinkle with grated chocolate.
Garnish with 1-2 cocktail cherries with stems.

❄️ Storage:
Can be stored in a closed container in the refrigerator for up to 48 hours.

Leave to stand at room temperature for 10-15 minutes before serving.
