1. In a medium bowl, whisk together flour, baking soda, baking powder, salt, and vanilla powder. Set aside.
2. In another bowl, beat softened butter until smooth and creamy.
3. Add brown sugar and mix until fully combined, then add white sugar and beat again until fluffy.
4. Add 1 tablespoon creamy peanut butter and mix until blended.
5. Add egg and vanilla extract, then mix again until everything is smooth.
6. Gradually fold in the dry mixture until the dough begins to form.
7. Add another 1/2 cup of peanut butter for a richer flavor and fold it evenly throughout the dough.
8. Transfer the dough into a bowl, cover, and refrigerate for at least 1 hour (or overnight for best flavor).
