For the Sauce
200ml (7.0 fl oz) water
10g (0.4 oz) young ginger, grated
1 tbsp oyster sauce
2 tbsp light soy sauce
½ tbsp premium dark soy sauce
½ tsp sugar
1 tbsp Chinese rice wine (optional)
A few dashes of white pepper

For the Stir-fry
300g (10.6 oz) boneless chicken thigh, cut into bite-sized pieces
1 scallion, cut into 2cm lengths
1 red or yellow onion, sliced
3-4 cloves of garlic, chopped
Some cornstarch solution (approx. 1 tsp cornflour, mixed with 2 tbsp tap water to make a slurry)
