Ingredients (for 2-3 servings)
For the vegan steaks (medallions):
• 400 g firm natural tofu (approx. 14 oz)
• 2 tbsp soy sauce
• 1 tsp maple syrup
• 1 tsp tomato paste
• 1 tsp smoked paprika powder
• 1 tsp garlic powder
• ½ tsp thyme (dried or fresh)
• 2 tbsp olive oil
• Freshly ground pepper
For the oven-baked vegetables:
• 500 g small potatoes, halved (approx. 1.1 lb)
• 1 red bell pepper, cut into large pieces
• 1 yellow bell pepper, cut into large pieces
• 1 red onion, cut into rings
• 2 tbsp olive oil
• Salt, pepper, thyme or rosemary
