500 grams paneerr cut into bite size pieces
sautee till golden in color
set them aside
2 medium sized onions petals, sautee lightly for 1 min until translucent
1 chopped green pepper, sautee lightly for 1 min
For the masala
Heat 2 tbsp oil
1 tbsp cumin seeds
bay leaves
10 black pepper corn
6 cloves
1 star anise
5-6 green cardemom
1 inch cinnamon sticks (2)
1 black split cardamom
mix into oil and let the flavors of the masala infuse into the oil
3 medium onion paste - add to masala
saute until brown
1 tsp salt
1 tbsp garlic
1 tbsp ginger
1 tbsp green chili paste
sautee for 2 minutes till the raw flavors disappear
2 tbsp kashmiri red chili
1 tsp turmeric powder
2 tsp coriander powder
1 tsp cumin powder
mix well
puree of 3 tomatoes
sautee till the masalas are fried nicely
add 1 tsp salt
fry till oil separates from masasla
soak 20 cashews and make a paste, add to masala
keep stirring or cashews will burn
add water and stir for 2 minutes
salt 1/2 tsp
add fried paneer to masala
sauteed onions and green pepper
mix well
add water and adjust consistency
taste and adjust salt
cook for 5 minutes
ad 1/2 tbsp of garam masala
1 tbsp kasuri methi
mix well
cover and cook for 2 more minutes
garnish with coriander leaves
serve with rice roti or naan
