Instructions:
1. Prepare the Vegetables:
Cut two eggplants into small half circles, two zucchinis into small half circles, three carrots into circles, two bell peppers into medium chunks, and three potatoes into small wedges.
Chop green onions into long pieces and half an onion into medium chunks.
Place all the prepared vegetables into a baking tray. Add one cup of sweet peas.
Drizzle olive oil over the vegetables and season with salt, one teaspoon of garlic powder, one teaspoon of paprika, and half a teaspoon of black pepper.
Mix everything well to ensure the vegetables are evenly coated.
2. Bake the Vegetables:
Preheat your oven to 400°F (200°C).
Bake the seasoned vegetables for forty minutes.
3. Prepare the Tomato Sauce:
Heat a pan over medium heat and add a little vegetable oil.
Sauté one chopped onion until softened.
Add one tablespoon of chopped garlic, two tablespoons of tomato paste, three diced tomatoes, and a hot pepper (optional).
Season with one teaspoon of cumin, one teaspoon of coriander, one teaspoon of paprika, half a teaspoon of black pepper, one teaspoon of vegetable bouillon, and salt to taste.
Cook until the tomatoes soften, then stir in one cup of water. Let the sauce simmer over medium heat for five minutes.
4. Combine and Bake:
Remove the roasted vegetables from the oven and pour the prepared tomato sauce over them. Mix everything together.
Return the tray to the oven and bake for another ten minutes.
5. Serve:
Garnish with freshly chopped parsley.
Serve warm with bread or rice.
