Let's make a quick chicken taco soup.
I'm starting out with some rotisserie chicken
to save us a lot of time
and then a lot of pantry-stapled canned goods
for a quick and delicious meal
the whole family is gonna love.
Right, so I'm starting out in this big pot.
Use a soup pot that you have on hand
and I'm gonna add a little bit of olive oil at the bottom.
I'm gonna go ahead and add my black beans in the pot.
I also got some red kidney beans, but you don't have those.
Use all black, all kidney beans.
That's a great thing about taco soup.
I'm also using a can of corn, but you can use frozen corn
if you don't have a canned corn, use that.
All of these have been drained and rinsed
to get any of the sodium from the can out.
I'm gonna go ahead and give this a quick mix.
I just wanna start to heat this through a little bit
before I add the rest of my ingredients.
What's so great about this soup
is that it has all the flavors that you love
from tacos, in a bowl, in super warm.
Speaking of tacos, taco seasoning is up next.
Let's add that to the pot and stir it.
Make sure seasoning gets in all the beans.
Continuing with the quick and simple theme here,
I've got a cup of salsa.
Use spicy, mild, whatever it is that your family
and you love, that's what goes in the pot.
I also have a can of diced tomatoes.
You can use a petite or the larger ones.
I did not drain it because I want all that tomato juice
and water to go in the soup.
Let's give this a stir.
Now the star of the show
and what really saves us a lot of time in this soup
is using store-bought rotisserie chicken
or if you already have cooked chicken, use that.
You need about two to three cups,
depending on the size of that store chicken,
about half to two thirds of a rotisserie chicken.
And this recipe is part of an entire rotisserie chicken
series that I've got here.
So if that's your jam, make sure you check the other videos
in the series in the description box
and hit that red subscribe button
so you and I can make quick and easy meals all the time,
once a week at least.
So check it out, it's already looking thicker.
Chicken, beans, corn, salsa,
all the stuff that we love in our tacos or burritos in here.
And I'm also gonna add some chicken stock or broth.
Now that already is starting to look like our taco soup.
Awesome, so now I'm just gonna put the lid on
and let it simmer for 20 minutes, 15 to 20 minutes
while I go clean up and do something else.
All right guys, it's been 20 minutes
and this taco soup is ready to be served.
So rich, so hearty, every spoonful is delicious.
What's better than taco soup?
Taco toppings.
So let's add some cheese, some sour cream and some avocado.
Healthy, delicious and so quick.
This rotisserie chicken is an awesome recipe in the series.
