We've got a lovely red lentil and vegetable slow cooker soup on the menu today,
all topped off with some crispy tortilla strips. Hi I'm Nicky, welcome back to our kitchen where
we show you how to make delicious family-friendly recipes. Now this slow cooker vegetable soup
is made a little bit creamy with the addition of red lentils and cheddar cheese and we've
also got a touch of freshness in there with the addition of some baby spinach leaves.
So let's get cooking. Place a finely diced onion into the slow cooker along with one red
bell pepper that's been deseeded and finely sliced, three carrots that have been peeled
and chopped into small pieces, two medium maras piper potatoes that have been peeled
and chopped into small cubes, 100 grams or half a cup of red lentils, 720 ml which is about three
cups of vegetable stock, half a teaspoon of salt and quarter of a teaspoon of freshly ground black
pepper. Now give that a stir together and place the lid on the slow cooker.
Now we're going to cook that on low for six hours or you could cook it on high for four hours
and whilst it's cooking we're going to make the crispy tortilla strips. In a small bowl mix
together one tablespoon of olive oil along with half a teaspoon each of garlic salt and dried
parsley. Take a plain tortilla wrap and brush the olive oil mixture onto one side of the tortilla.
Now slice the tortilla into thin strips or wedges then place on a baking sheet in a single layer.
Bake in the oven at about 200c or 400f for about five to seven minutes until crisp
and then remove and allow to cool. When the soup's ready we're going to stir in 60 grams,
which is about two packed cups of baby spinach, along with 75 grams which is about three quarters
of a cup of grated cheddar. Stir that all together until the spinach wilts, then divide the soup
among bowls and top with pieces of the crispy tortilla. I also like to sprinkle on a little bit
extra cheddar cheese as well. And there we go, that's my slow cooker lentil and vegetable soup
full of vibrant veggies. Really hope you've enjoyed this recipe,
it's part of my new book It's All About Dinner. See you next time.
