On this episode, we hit a deep snapper ground off the south of the island called Trinidad. On the first drop we used a whole squid and hooked into a massive snowy grouper. It's rare to find them this big down here, so I was super excited to show you guys. Unfortunately I didn't realize taking my air pods out while using Filmic Pro was going to cut out the sound. Lesson learned. Then we filet the catch at Port St. Charles before taking it to another local restaurant called The Sea Cat for some local cuisine. Hope you guys enjoy!

my name is Adam Maro and I've been a
fisherman for over 25 years in that time
I've seen some pretty incredible things
happen on the
water oh my God I got it oh my god dad
look Dad look did you see that for me
fishing is not just a sport it's my
purpose so now I've decided that it's
time I share my life passion with all of
you follow me around the island of
Barbados as we catch clean and cook the
amazing fish found in these
Waters this is the opening Series of on
the line so today we're out on a bar
called
Trinidad and I think we just hooked up
to our grouper I've been trying all week
to get this for you guys 520 to
go
o bend over it's either a grouper or a
shark
grer oh I hope
it's now this is when something happened
that is just unacceptable I didn't
realize that taking my airpods out of my
ears and putting them back in their case
without disconnecting them would cut the
mic on my iPhone recording this but it
happened and we have no sound for this
part
the biggest snowy grouper I've ever
caught in Barbados and I have to tell
you about it like
this snowy grouper are dark brown with
an almost purple tinge near the top and
they have beautiful white spots that run
down their sides we hook this grouper on
a piece of squid and 800 ft of water and
when fish are brought up quickly from
the deep the change in pressure causes
parts of them to expand this phenomenon
is known as barot trauma
and that's why their eyes pop
out Snow's have huge spines on their
Dorsal fins and a giant mouth that
protrudes and extends to engulf their
prey but my favorite part about this
fish it's one of the best eating bottom
fish on the planet so we drop straight
back down to see if any more were
lurking in the
area all right so we're hooked up again
on
Trinidad got some that's stalling us out
I think it might be another grouper not
as big as the one we pulled up earlier
but still might be a little
girthy what do you think Larry Paul I
think probably it might be a another
grouper or flame tail a flame
tail that would be the
Onaga 180 ft to
go Larry the Paul says Flame
tail or
grouper it's we got we got head I don't
know if it's floating or that's just
because we're
drifting
140 hopefully whatever it is it's air
bladder's burst and it's not going back
down is it I don't think so here he
comes I got color little more
buddy little
more what do we have here Auto Stop done
manual engaged rail
whoa nice
Queen see the all the bank gone too
Larry Paul's going to hit it with the
[Music]
Gaff I'm going to slack the drag for you
a good
size better right tell you something
hit him with the green up Larry there we
go all right here bring her
in got
him nice
fish
W all right I got him I hope so yeah I
got him see that circle hook wow did not
k catching the corner of the jaw it got
in the jaw oh that's a nice that's 12
nice 12 lb fish
yeah wow what a beautiful fish what it
is what a nice looking
fish this is a beautiful queen Snapper
the
Onaga have long sickles on their tails
that come out to about here that's why
they're called Flame
tails on the island and they're
beautiful just like these are not much
difference between the two oh wow Larry
Paul says we should go back down again I
think he might be
right what a day finally after a week of
horrible bottom fishing we're getting a
few these fish have extremely sharp
spines on their Dorsal fins that can
poke you very
easy as well
as
spine on its anal
Fin and
teeth pretty much like any other
Snapper
sharp not too long but
deadly they will get you beautiful meat
on these fish too they live in deep
water slow growing no toxins very cold
down there best quality you're going to
find how's that shot look Larry Paul
good all right let's get them on
Ice
woo
yeah let's see can you see in
here we've got our big
grouper
oh man that is a nice size
grouper this snowy is a little big to
filet in rough water and I didn't want
to risk it going overboard so we brought
it to the dock at Port St Charles and
gave the rock crabs a little
[Music]
treat so here it is a snowy grouper we
finally chase down think it's about 20
25
lbs beautiful
fish huge mouth on them they just engulf
their prey wait till you see the meat on
this guy so we've got the 9 in Bubba
electric
playet so much
easier than any manual blade I've ever
used so Cuts right into the head these
grouper have really thick hides
too
so got to get through
that before anything else I'm going
right down to the backbone to make sure
I don't miss
any grouper meat cuz this is not a
fish you want to miss all right straight
down I literally had
to manually put this blade
down
look at
that absolutely
beautiful same thing on this
side I do wish I
had a bit of a longer
knife don't want to go through the
backbone but I do want to
stay this close
found the
edge this this play is so
thick I literally have
to do it one angle by one
angle
wow now
that is the prime meat of the ocean
right
there it's a long week of work but well
worth
it all right I'm going to see you guys
in the kitchen for a local recipe of how
to cook this beautiful fillet look at
that again oh my God look at the
marbling on it can't even
that's got to be one of the prettiest
Meats I've ever
[Music]
seen tonight we're taking the catch to
the seat the sister restaurant to the
horny Ram seat is what the locals here
call octopus and they specialize in
cooking local Style seafood dishes with
a continental flare the
way do these are rinsed off yeah this is
a black and seasoning yeah I got little
B season
[Music]
there so the queen is done now the
grouper ready grou grou
grou so we'll do the uh mixed chips
mixed chips and the vegetable medley
saute V I'll do and the fries and Greek
salad
wow on the grill heavy on the seasoning
I like
[Music]
it feels good
[Music]
C
wow
all right we got seared local
spice secret blacken
recipe and
snowy look at this we got our beer
battered grer and
queen grilled Queen and grouper more
beer battered Queen and grouper Luca and
Logan you remember Logan all right let's
get into it yeah Bo taste it tell me how
it
is it's not grab that one oh yeah of
course you grab the cheek I got these
grouper cheek
Meats go hit it try this
one how's that yeah too
good
M oh wow look at that beer battered grer
yeah leg
apart actually really nice cuz it's very
similar to cod in fact it's is C Cod
grer is sea right look at that I'm
trying to get this onto my plate before
it falls
off oh my
God
English look at that that is better than
any English fish and chip I've ever seen
that's right this is so amazing this
array of groupers so this is the seat
restaurant beside the horny Ram yeah so
tell us about this spot right so so this
originally was started as like a fish
and chips concept of battered fish
English style because you know the
amount of British tourists we get here
we thought this would be a hit but that
soon developed into a full-on seafood
restaurant so we moved away from the
batted fish because that would be the
only thing we get complaints about we
should bring it back really well we have
it people request it but we were
bringing we were yeah we were using
imported cloth and anyway so the cat
basically specializes in the freshest
local seafood on the island local
seafood on the island you heard it here
the freshest and just how you brought it
like to the table like from the boat
today straight to the table and have it
cook like this this is basically how our
fish comes in Daily and it's cooked
nightly I love it and if people on the
island bring you their catch you cook it
like this only only um Jeffrey Tran
organized that with his spare time
Charters where if people bring the fish
here we charge them like a just a and
plus whatever size they have so yes easy
and I'll tell you something else when I
was in Florida there was a place in
pompo Beach called piranha paths and
they were famous for allowing the
fisherman CU it's a fishing town to
bring their fish in and they would cook
it and just charge them for their drinks
and their sides so we kind of thought we
would replicate that here as well love
it love it well did not disappoint
tonight amazing oh my God okay I got to
stop
taping
