Back in my school days, bubble tea, fried skewers, and barbecue were the ultimate trio for students. These treats were always available right outside the school gate. I remember a cup of bubble tea used to cost $0.5 in elementary school, but now the price has multiplied. I hadn’t had it for years, and recently I found myself craving that familiar taste. So, on a whim, I decided to make a plant-based version of bubble tea. When I took the first sip, I couldn’t help but smile—it tasted surprisingly close to the original! It was such a nostalgic moment.
在我的学生时代,珍珠奶茶、炸串、烧烤可以说是学生三件套了,校门口永远不会缺席,记得读小学时珍珠奶茶2.5块钱一杯,现在都翻了好几倍了,但却很多年没吃了,最近突然想念那个熟悉的味道,心血来潮便用纯素的做法制作了珍珠奶茶,当我尝一口便欣慰的笑了,你别说这味道还真的特别像,回忆感瞬间拉满!
Ingredients/食材:
珍珠:
木薯粉 100g
水 85g
老红糖 35g
Pearls/Bubble:
Tapioca starch: 100g
Water: 85g
Dark brown sugar: 35g
焦糖部分:
老红糖30g
紫米水100g
Caramel part:
Dark brown sugar: 30g
Purple rice water: 100g
奶茶:
红茶包 3包(或红茶8g)
开水 350g
椰浆 80g
燕麦奶 300g
赤砂糖 20g
Milk Tea:
Black tea bags: 3 bags (or 8g loose-leaf black tea)
Hot water: 350g
Coconut milk: 80g
Oat milk: 300g
Raw cane sugar: 20g
