This dish was originally made with lamb, and I altered it to a vegetarian version. It's the season of pea, so I made it into this pilaf
这个抓饭只是一个素食的做法,不算是正宗的抓饭啦,现在初春豌豆上市了,非常鲜嫩软糯,用来做抓饭也非常美味。

Ingredients/材料:
鲜豌豆 250g Fresh Pea
红萝卜 一根 One Red Carrot
胡萝卜 半根 Half Carrot
牛肝菌 一个 One Porcini Mushroom
洋葱 ¼个 ¼ Onion
樱桃番茄 7个 7 Cherry Tomatoes
生姜 8g Ginger
葡萄干 两大匙 2 Tbsp Raisins

调料/Seasonings:
盐 适量 Salt to Taste
孜然粉 一小匙 1 Tsp Cumin Powder
生抽 一小匙 1 Tsp Soy Sauce
姜黄粉 ½小匙(可选) ½ Tsp Turmeric Powder

Steps:
1. Wash the rice and quinoa for three times and soak for 1 hour, then get rid of water and set aside.
2. Add ginger and porcini mushrooms. Fry until fragrant, then add peas and onions, and continue to fry until the onions become transparent. Add carrots and tomatoes, and fry the ingredients until fragrant.
3. Add all the seasonings and stir-fry for a while, then add water and stock cubes. The water should be just enough to cover the ingredients. Spread the rice evenly on it and cover with a lid, then turn to low heat and simmer for about 18 minutes. At last, open the lid and sprinkle with raisins, then cover and continue to simmer for 20 minutes.

步骤:
1.大米和藜麦淘洗三遍浸泡1小时过滤备用。
2.加入生姜和牛肝菌炒香,下豌豆和洋葱,炒到洋葱变透明加入红萝卜和番茄,继续将食材炒香。
3.下所有调味料将调料炒香,加入水和高汤块,水量刚好淹没食材即可,在上面均匀铺上泡好的米粒,盖上盖子水沸腾后转小火煮18分钟左右,开盖撒葡萄干,盖上盖子继续焖20分钟即可。

TIPS:
1. You can use other mushrooms here such as shiitake mushrooms
2. Use less water for al-dente rice, or use more water for softer rice.
3. After the water is boiled, turn to low heat, otherwise it will burn the bottom of the pot. You can move the pot to let it heat evenly

TIPS:
1.牛肝菌可以用香菇等其他菌类
2.水量可以控制,与食材齐平基本软硬适中带有一点嚼劲,想吃有嚼劲一点就适当减少,软一点就适当增多
3.水开一定小火,不然会糊锅,期间可以移动锅子让它均匀受热
