「素食」素食版云南凉米线,清凉一夏就靠它了!|【Vegan】Yunnan Style Rice Noodles

I enjoy eating cold rice noodles in summer. In this video, I will make the Yunnan style cold rice noodles at home. I modified it into vegetarian version. It's not authentic, but I managed to use the seasonings to copy the signature brown sugar vinaigrette. It tastes so good!
夏天特别爱吃凉米线了,虽然不能去云南吃,但在家也可以制作家庭版,这个是一个素食改良版本,当然非正宗云南凉米线,正宗做法比较复杂,会用到当地发酵的酸甜醋,我用红糖和米醋加上各类香料也能简单的模拟出味道,重要是觉得好吃就是了哈哈!

Ingredients/材料:

鲜米线 120g(或者用干米线泡发)120g Fresh Rice Noodles (Use dry rice noodles if you can't find fresh one)
鲜黑木耳 几朵 Some Wood Ear Mushrooms
芹菜 两根(当地人用韭菜,我用它代替了)2 Stick Celery (The local usually use garlic chives)
香菜 一株 1 Cilantro
花生和芝麻 适量 Some Peanuts and Sesame Seeds
生姜 8g Ginger

红糖醋水/Brown Sugar Vinaigrette:
八角 一个 One Star Anise
香茅草 一根(可选)One Lemongrass (Optional)
桂皮 一块 One Piece of Cinnamon
香叶 一片 A Piece of Bay Leaf
红糖 两大匙 2 Tbsp Brown Sugar
生抽 一大匙 1 Tbsp Soy Sauce
米醋 两大匙 2 Tbsp Rice Vinegar

调味料/Seasonings:
油辣子 两大匙 2 Tbsp Chili Oil
生抽 一小匙 1 Tsp Soy Sauce
红糖醋水 8大匙 8 Tbsp Brown Sugar Vinaigrette from above
生姜水 4大匙 4 Tbsp Ginger Water

脆哨/Vegan Crisp:
老豆腐(含水少的)300g Extra Firm Tofu
香菇 6朵 6 Shiitake Mushrooms
黄豆酱 一大匙 1 Tbsp Soybean Pastes
甜面酱 一小匙 1 Tsp Tianmian Sauce
郫县豆瓣酱 一小匙 1 Tsp Pixian Douban
赤砂糖 一小匙 1 Tsp Brown Sugar
姜末 6g Ginger
