
「素食」梅干菜苦瓜饭,或许你可以试试这样做苦瓜 |【Vegan】Dutch Oven Rice with Meigan Cai and Bitter Melon
嗨~夏天过了,但我还是好爱吃苦瓜,今天我抓住它的尾巴做了一道不会那么苦的做法。单独吃苦瓜会有点苦,但把它和梅干菜组合后苦味就淡了些许,因为梅干菜气味很强烈,估计抢了苦瓜的风头,不过苦也是五味中一味嘛,试试这道料理,苦也是一种滋味!
Hi~ The summer is over. Today I will show you how to make a claypot with meigan cai and bitter melon.
Ingredients/材料:
苦瓜 一根 One Bitter Melon
梅干菜 35g Meigan Cai (aka Dried mustard green)
胡萝卜 80g Carrot
核桃 两个 Two Walnut
五常大米 两杯 2 Cup Rice
白藜麦 ⅓杯 White Quinoa 1/3 cup
昆布 8cm*8cm Kombu
调味料/Seasoning:
生抽 一大匙 1 Tbsp Light Soy Sauce
赤砂糖 一小匙 1Tsp Brown Sugar
海盐 ½小匙 1/2 Tsp Salt
TIPS:
1.要想米粒松散弹牙一定要淘洗充分浸泡,我用了五常大米做出来口感会更好,加入核桃会增加米粒的香甜味同时附有坚果香气。
Soak the rice for a while will achieve better texture. I also add walnut to give some extra flavour.
2.苦瓜的白膜是最苦的,所以一定要去除干净。
The white part of the bitter melon is really bitter. Make sure to clear it thoroughly.
3.梅干菜一定要加点糖和酱油才能带出它的味道
Add some sugar and soy sauce to bring out the flavor of Meigan cai.
4.用昆布水煮饭主要是增加鲜味,昆布水是很清淡的鲜甜,而这种鲜味不会过于强烈,煮出来的饭有种自然微妙的鲜甜
Cooking rice with Kombu water will add umami into the dish.
5.食材要采取拌的方式最好吃,不要全部加进去煮,这样口感不太好
Cook the ingredients separately, and then add them into the rice at the last step.
6.火候把控很重要,一定要水开后一定要最小最小火煮12-15分钟,如果火太大,时间煮太短底部就糊底了,而上面的米饭可能没熟
Heat control is very important. After the water is boiled, make sure to turn down the heat to minimum and cook for 12-15 mins.
7.最后不要揭盖,焖5分钟以上让铸铁锅自身的热量继续烹饪,让米饭达到更香滑的程度。
Wait for at least 5 mins before openning the lid. This is to give the rice a even better tastes.
8.没有铸铁锅可以用砂锅
Use claypot if you don't have a dutch oven.
