
Banana Muffins with Almond Flour (Gluten Free & No Added Sugar)

Gluten Free Banana Muffins Recipe -
3 ripe bananas
3 large eggs at room temperature
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
3 cups (300 grams) almond flour
Optional topping - 1 TBS coconut sugar + 1/2 tablespoon ground cinnamon mixed
Heat your oven to 350 F (176 C). Line a 12 muffin tray with paper liners.
Place the bananas, eggs, vanilla, ground cinnamon, baking powder, baking soda and salt in a food processor and process until smooth. Add the almond flour and process again until you have a smooth dough.
Scoop into the muffin trays about 3/4 full. Sprinkle with cinnamon sugar on top if using. STore any left over cinnamon sugar in a jar in the pantry.
Bake for 25 to 30 minutes -- until an inserted pick comes out clean. Remove from oven and cool down completely. Keep these in a closed container in the fridge for up to a week.
