Baba Ganoush
1 large eggplant
3 garlic cloves— peeled
1 teaspoon salt
1 large lemon — juiced
2 heaping tablespoons tahini
1/8 teaspoon ground cumin
Chopped parsley, olive oil, paprika for garnish
Heat your oven to 400 F (200C).
Wash the eggplant and remove the stem. Wrap it in aluminum foil and roast it for 45 minutes.
Remove it from the oven and let it cool down. Peel it and place it in the food processor.
Add the garlic, salt, lemon juice, tahini and cumin. Process until smooth.
Scoop into a bowl and garnish with chopped parsley, a sprinkle of paprika and olive oil.
Serve with pita bread or pita chips or crudités.
