Welcome to Taiju's Kitchen.
Today I'm going to show you how to make three types of Japanese style ice creams.
So ice cream is definitely a western thing, but of course it's spread out all over the
world now.
And ice cream is definitely a new thing for Japan, only in the last 50 years or so, but
also we've been corroborated to our culture.
There are also some very strange ones like wasabi ice cream, unagi ice cream, I've also
seen pepper ice cream, seaweed ice cream, or even tsukemono or pickle ice cream or miso
ice cream.
But today I'm not going to show you those, I'm going to show you more of the popular
ones.
First is azuki ice cream.
This is a mixture of anko and ice cream, this is a very popular thing in Japan.
Second is I think it's more of the new one, black sesame ice cream.
You may think sesame and ice cream, how could they match?
But sesame kind of give out really the creaminess, kind of like the peanut butter, actually goes
well with sweet.
And the last is matcha ice cream, which is also already popular outside Japan.
And today I'm not going to show you a complicated process of making ice cream from scratch,
from milk and cream, but instead I'm just going to mix it up with vanilla ice cream,
which is a method that my friend Shomi wants.
So these are things that you can very easily do at home, and so in this hot summer I hope
you give this a try yourself.
Then, let's get started.
Here are the ingredients for three types of Japanese style ice creams.
So here I have just regular vanilla ice, try to get vanilla ice cream that doesn't have
a very strong flavor, just kind of plain.
It might just interfere with the rest of the flavor, but whatever vanilla ice cream you
can find is fine.
And then for the azuki ice cream I have here canned anko, you may be able to find it in
a package like this, or you can also make it yourself.
I have another video on how to make anko yourself, if you're interested you can watch that, or
you can just get these pre-made anko.
Then for the black sesame ice cream, I have here black sesame tahini.
My friend told me that you can find this online, and I was able to get it.
This is just perfect.
I've never seen this on store, but in many places you can find it online, so I hope you
get to find these.
And of course, the matcha powder for matcha ice cream.
For those who don't know what matcha is, it's a powder form of green tea, where you mix
it with hot water and you can have matcha.
And so today I'm going to use that for matcha ice cream.
Now let's get into it.
Okay let's mix these together.
So to do this you want to leave the ice cream in the room temperature for about 15 minutes
or so, so the ice cream will be a bit softer.
And using some kind of container like this.
Then here I'm going to measure in about 200 grams of ice cream.
Just about, that's probably enough.
Then here I'm going to mix in the anko.
This is really a preference thing, how much you put in, but I put in about half the amount
of the ice cream.
You can put in more if you like the flavor, but the more you put in, the end product might
be a little bit too hard, so probably half amount is good.
So about 100 grams.
Or just about.
Then we're just going to mix these in.
Make sure there's no clump of ice cream.
And then once it's got mixed thoroughly like this, then I'm going to put this in the freezer
and let it sit for at least a couple hours until the ice cream frees up again.
Then as the next thing we're going to mix in with the black sesame tahini, or black
sesame paste.
So just like the other one, I'm going to put it in a container like this.
Then here again, about 200 grams of ice cream.
Okay perfect.
Then here I'm going to put in 1-2 tablespoons of black sesame paste, or black sesame tahini.
Depending on how thick you want it, you can put more or less, but today I'm going to put
in about 1.5 tablespoons.
So they look like this.
And just about a half.
And just like with the other one, I'm going to just mix it in.
So once it's got mixed thoroughly like this, this is also finished, and we're going to
put this in the freezer also for about a couple hours or so, and let it firm up again.
So last but not least, I'm going to mix in the matcha.
So in order to do this, you can mix in the powder, but it's actually better to mix it
with water a little bit first.
It gets mixed much better.
So I'm also going to measure in about 200 grams of ice cream.
So for that I'm going to put in about 2-3 teaspoons of matcha powder.
Also depending on how thick you want it.
And so today I'm going to put in about 2.5 teaspoons.
Then we're going to mix in here about 2 teaspoons of hot water.
And then mix it in so that all the powder gets dissolved.
Try to make sure that there's no clump.
Now once it's got mixed thoroughly, then we're also going to measure in about 200 grams of
ice cream as well.
Okay, perfect.
Then here I'm going to put in these matcha paste.
And just like with the other two, I'm going to mix this in.
So once it's got mixed thoroughly like this, this is also finished, I'm going to put this
in the fridge and let it firm up again.
Okay, three hours has passed, let's look at the ice creams.
And these are finished.
So that's the zuki ice cream.
And that's the black sesame ice cream.
And that's the green tea ice cream.
Then with that, these ice creams are finished.
Let's eat.
Oh, they're starting to melt, so let's eat fast.
Itadakimasu!
Let's start with the azuki ice cream.
Itadakimasu!
Mmm!
This subtle flavor of the azuki beans is just a really great match to go with the ice cream.
It's really refreshing.
And the black sesame ice cream.
This may not look so appetizing, but this is really delicious.
The black sesame itself is really creamy, and it's just a perfect match to go with the ice cream.
You should definitely try this.
And lastly, the matcha ice cream.
Itadakimasu!
Oh, this is really good.
This kind of bitterness of the matcha is just really great.
And surprisingly, this matcha flavor goes really well with milk.
So this is just a really great flavor.
So delicious.
They're all so delicious.
Oh, they were all so delicious.
Gochisosamadeshita!
Oh, that was so delicious.
Tasted just like home.
So as you saw, making these Japanese-style ice cream is really not that difficult at all.
You just have to mix these ingredients with the vanilla ice, and there you have it.
And I think these are just really perfect for the hot summer.
So if you want to try some new flavor for the ice cream, I suggest you give this a try.
I'll guarantee that you're not going to regret these.
