Easy gazpacho recipe | Spanish cold tomato soup with barely any cooking

In today's video, I'm sharing a recipe for a light and refreshing gazpacho soup that's perfect for summer. This Spanish classic is made with fresh vegetables and pantry staples and involves barely any cooking.

The traditional recipe uses water, but I prefer to add juice. It gives a certain “pickleness” and favors more smooth texture.

Ingredients:
500ml tomato juice
1 red pepper
1 large tomato
1 cucumber
1 small red or white sweet onion
2 garlic cloves
1 tbsp wine vinegar
2 tbsp olive oil
sea salt
ground black pepper

Serve the gazpacho cold with finely chopped cucumbers finishing it with olive oil, freshly ground pepper, and flaky sea salt. You can also use store-bought croutons for additional crunch or make your own by tossing white bread cubes with olive oil and toasting them in the oven until golden brown.
