2 tbsp olive oil
1 onion, finely diced
3 garlic cloves, finely chopped
1 red bell pepper, diced
1 yellow bell pepper, diced
1 small zucchini, diced
1 carrot, small diced
2 tbsp tomato paste
400 g chopped tomatoes (14.1 oz / approx. 1 3/4 cups)
250 g cooked chickpeas (8.8 oz / approx. 1 1/2 cups)
700 ml vegetable broth (23.7 fl oz / approx. 3 cups)
Vegetable broth
1 tsp salt
1/2 tsp black pepper
1 tsp sweet paprika powder
1/2 tsp cumin
1 tsp dried oregano
1/2 tsp thyme
1 pinch of chili flakes to taste
1 tsp maple syrup or sugar
1 tbsp lemon juice
To serve:
2 tbsp fresh parsley, finely chopped
1 tbsp fresh basil, finely chopped
some olive oil for drizzling
optional: toasted bread or baguette
