Vanilla Buttercream * 1 Cup salted butter, softened to room temperature (2 sticks or 230 grams) * 3 Cups powdered (confectioners') sugar (360 - 480 grams) * 2 tsp and 1/2 vanilla extract * green food dye (optional. you can use any color)
Directions Preheat oven to 350F degrees. Spray a 9-inch springform or baking pan (round or square) with nonstick spray. Set aside. In a medium bowl, mix together flour, baking powder, baking soda, and salt. Set aside. In a large microwave-safe bowl, melt butter in the microwave. Whisk in the sugars vigorously getting out any brown sugar lumps - mixture will be gritty. Whisk in egg, yogurt, milk, and vanilla extract until combined. Slowly mix in dry ingredients until no lumps remain. Batter will be thick. Slowly stir in sprinkles, but do not overmix because the sprinkles will bleed their color. Spoon batter into prepared cupcake pa, fill 3/4 of the way. Bake for 25-30 minute or until a toothpick inserted in the center comes out clean. Allow to cool. To make the frosting, beat softened butter on medium speed with an electric or stand mixer. Beat for 3 minutes until smooth and creamy. Add sifted powdered sugar spoon by spoon until incorporated. This takes around 5 minutes. Add in cream, food coloring and vanilla extract with the mixer running.
Frost cooled cupcake as desired and top with sprinkles. There may be leftover frosting depending how much you wish to use. Cover cupcake and store at room temperature for up to 3 days.
Hi everybody, I'm Gemma Stafford and this week is my birthday week so I'm going to be
sharing with you my recipe for Funfetti Cupcakes.
These cupcakes will transport you back to when you're a child going to all of those
birthday parties but the great thing about this recipe is that it's all natural ingredients
and nothing from a box.
So let's get baking.
To make the cupcakes, put all your dry ingredients together in a large bowl.
Flour, sugar, raising agent, and salt.
Mix well together.
In a separate bowl, we're going to melt our butter, whisk in our brown sugar to make sure
that there's no lumps, add in your buttermilk, and sour cream.
These two ingredients are really important because this is what makes your cake really
moist.
Crack in your egg and whisk.
Add in your vanilla extract.
So to finish your cake, your wet and your dry, and your sprinkles.
Add your wet mix into your dry and then just mix together until combined.
Be careful not to overmix.
Your dough is going to be really stiff but that's okay.
We add our sprinkles in last so they don't bleed into your mix and they keep their shape.
So just gently fold them into your mix.
Now this is the fun part.
To fill your cups, put in around a big spoonful of batter to around three quarters up the
case.
When they bake, they will just go a little bit over the lip.
Bake at 350 degrees for 25 to 30 minutes.
While they're baking, we're going to make the frosting.
You need butter at room temperature, sifted icing sugar, vanilla extract, and green food
dye.
Start off by beating your butter on its own to make sure it's nice and soft so when you
add the icing sugar, it can hold it.
Then add a spoonful of icing sugar at a time.
Doing this slowly will yield you really nice, fluffy icing.
Add in your vanilla extract and your green food dye.
Just do a little drop to see how much you need.
If you want more dye, it's a good idea to use a toothpick and add little by little rather
than adding too much.
This is perfect.
We're ready to go.
Our cupcakes are out of the oven and they're golden brown.
They're nice and cooled so we're going to frost them.
So fill your piping bag full of your icing.
Working with a piping bag is really easy.
Just think of it as a big pencil.
Right on your cupcakes with the frosting.
Pushing pressure from the top of the piping bag, not from the middle.
Then just gently scroll around your cupcake.
Finish your cupcakes with sprinkles.
These cupcakes would be a welcome addition at any party.
Funfetti is definitely my favorite kind of cake so that's why I'm going to have it at
my birthday.
