Hi Bold Bakers!
Today we are going to take my tried and tested method for my 2-ingredient no machine ice
cream and we are going to make lots of flavors of dairy free coconut ice cream.
This ice cream is not just for vegans, it is so delicious it's for everybody.
So let's get started.
So this is 2-ingredient no machine ice cream.
So one of the main ingredients is coconut milk.
Now the coconut milk that you buy is full fat coconut milk.
You do not want to buy low fat coconut milk because that won't work, it doesn't have
enough solids in it.
And coconut cream won't work either.
So full fat coconut milk.
Now we put these in the fridge overnight so they get really lovely and hard.
And then what we do, so watch this, this is a sneaky trick.
We take our cans and we turn them upside down, just like that.
And then we take a tin opener.
This is a really great trick when you're trying to separate water from solids.
You cut open the tin.
And then do you see this?
What you have here is coconut water.
So what we're going to do is pour the coconut water away.
Now save the coconut water because it works really well in smoothies.
It's really hydrating and tastes delicious.
So what we have left, do you see this right here?
Coconut solids.
This is exactly what we want.
This is going to be the base of our ice cream.
See?
It's like baking magic.
Now we're going to take these solids and put them into our stand mixer.
Now just another little tip about your coconut milk, if you have it in the fridge overnight
and it doesn't go solid, I recommend changing your brand of coconut milk because this can
happen.
Okay, so our coconut solids are in there.
Then you want to mix this up on a medium-high speed until it gets light and fluffy and there's
no more lumps of coconut solids.
It's nice and smooth.
So while our solids are whipping up, we're going to go ahead and get our coconut condensed
milk ready.
Now I have made this in a previous video.
It is really, really easy to make.
It is just coconut milk and sugar cooked together to make a lovely coconut-y syrup.
This will be the liquid sugar that is in our ice cream and it will make it lovely and scoopable.
So when the solids are nice and whipped, that's when we're going to add this in.
So this is nicely whipped up so now we're going to go and pour in our cold condensed
milk.
Now you want to make sure this is nice and cold because it will actually help your ice
cream whip up better.
Okay, so everything is in there.
Now we're going to turn it back on to a high speed and let it whip up again until it's
really lovely and thick.
Perfect.
So it's been around 3 minutes and our mix has whipped up lovely and thick.
The very last thing I'm going to add into it is some vanilla extract.
Now the reason that I add in vanilla extract is because it contains alcohol and it actually
will stop your ice cream freezing really hard.
And then just turn on the machine again to whip all that in.
Okie dokie, our ice cream is done.
Now just look at this texture.
Do you see how nice and thick that is?
This is what I want your ice cream to look like.
Now if you've made my 2-ingredient no-machine ice cream before, you'll notice that that is
really thick.
This one is a little bit softer because the fats and stuff are different but this is exactly
what we're going for.
Ok, so our ice cream is pretty much a blank canvas.
We can add a multitude of flavors to it and that is our next step.
So to make different flavors of ice cream, it could not be easier.
Just think about when you go to a yogurt shop and you get your plain yogurt and you get
all of your mix-ins.
That's exactly what we're going to do.
So in a little bowl, we're going to add in some of our coconut ice cream base.
So this first flavor we're making is Nutella Swirl.
So I have some lovely soft Nutella here that I put in the microwave for a few seconds to
make it kind of jiggly.
And then I'm just going to drizzle it over the top of the ice cream.
Then take your spatula and then just very gently swirl these together, creating these
lovely ripples of chocolate through the coconut ice cream.
You know, until you taste coconut and chocolate together, you don't realize what a good pairing
they are.
It's just absolutely delicious.
So now it's time to put it into our ice cream container.
Now I use these ice cream containers.
They're really great and I have a link on my website, BiggerBolderBaking.com, of where
you can actually buy these.
Also, the recipe for the ice cream can be found there, too.
Fill your tub all the way to the top with your delicious coconut ice cream.
Now if you don't have Nutella, you can always use melted chocolate and that will work really
well, too.
Okay, lovely.
This is definitely a thing of beauty.
And then I'm just going to go ahead and finish off the top with some chopped hazelnuts.
Now of course, the finishing touch is our homemade stickers and I've also got a link
on my website of how you can make your own stickers and call them your own creative names,
too.
So that guy is going to go straight on the front.
So this is my beautiful hazelnut Nutella swirl.
Now we can't taste it until it's frozen so I'm going to pop it into the freezer and we're
going to get started on another delicious flavor.
So we've made our chocolate flavor but now we're going to move on to something a little
bit more fruity.
We are going to make strawberry and mint ice cream.
Just like before, into our bowl, we're going to add in our ice cream base.
So to get that lovely mint flavor, I'm going to add into my ice cream base some homemade
mint extract.
We just want a little bit to give it a nice flavor.
And then for our strawberry, you know how much I love pureed fruit.
So this is pureed strawberries just mixed together in a food processor.
You want to just blend them until they're lovely and fine.
And this is what you get.
And then just gently mix all these ingredients together.
Look at that beautiful color.
I'm actually going to sneak a little taste of this.
Oh, yummy, yummy, yummy.
The coconut is absolutely delicious.
I'm telling you, there's not a sinner out there that wouldn't love this ice cream.
Okay, into our ice cream container.
Just like before, fill it all the way to the top with our delicious ice cream.
I'm just going to finish this guy off with a nice fresh strawberry on top.
And then, of course, my label.
This ice cream is called Minty Strawberry.
Oh, just look at how lovely this looks.
So your ice cream only takes around 4 hours until you're able to eat it.
And it will last in your freezer for up to 8 weeks.
So I'm going to pop this guy into the freezer and we're going to get started on another
great flavor.
I'm excited about this next flavor because it's something that I consume every day.
It's coffee ice cream.
Into the bowl with our ice cream base.
Now, for our coffee flavor, you want a small amount of liquid with the most amount of coffee.
So I like to dissolve coffee granules that are nice and strong only in a small bit of
liquid so you get a really dense, intense flavor.
I'm just going to go ahead and pour that into my ice cream base.
You can also use coffee flavored syrups.
That will work really well too.
And then, just like before, mix it all together.
Now, for those of you who love coffee desserts, this is right up your alley.
I feel like with coffee desserts, you either love them or you don't.
But I think everybody should try this because it's absolutely delicious.
Okie dokie, this is looking good.
Now into our container.
Just like before, fill your container all the way to the top.
The top of your ice cream, I like to add on a few little coffee beans just so you can
tell what it is and make it nice and pretty.
And then, of course, let's not forget our lovely sticker.
So this ice cream is called Coconut Café Latte because that's exactly what it tastes
like.
Can't wait to try this one.
Sticking with our fruity theme, our next flavor is one of Kevin's personal favorites.
It is banana ice cream.
Oh yeah!
This is such a simple ice cream because to our ice cream base, we're just going to add
in some simple mashed banana.
You get all of that lovely flavor, texture, the sweetness.
This is really a delicious ice cream.
And then just give it a mix in.
Look at all those bits of banana.
Yummy!
There you go.
It's that simple.
And then we're just going to bring in our tub and fill them up with our ice cream.
I like this ice cream.
You get that lovely natural sweetness from the bananas.
You know I love finishing touches so I like to place a few slices of banana on top because
your baking should always look pretty no matter what you're making.
And I think this label says it all.
This is a bold banana ice cream.
Beautiful.
Pop them into the freezer and we're going to get started on our next flavor.
So here you go.
We always save the best for last.
So this next flavor is a Key Lime Pie ice cream.
It's absolutely delicious.
So what do you love about a Key Lime Pie?
The graham cracker crust.
So here I have some biscuits all broken up.
You can use any kind of plain biscuits that you want.
And then just put them into your ice cream base.
Lovely.
Next, we've got the main ingredient which is limes.
I love any kind of lime dessert.
And we're going to take the zest off of these limes.
I love a Key Lime Pie because it's an O'Bake pie.
It has a nice thick crust.
And you have the beautiful, soft, squishy lime center.
I love it.
So once you get the zest off, I'm going to go ahead and cut it in half.
Then take a fork and squeeze out the juice.
Just for that added extra lime zing.
Everything is in there.
Now you just go ahead and mix it all together.
Look at all the cookie crumbs.
I like to leave big bits and small bits so you get different texture throughout your
ice cream as you eat it.
Okay, so this is all mixed up.
Smells delicious.
So we're just going to go ahead and pour it into our container.
Oh, yum, yum, yum, yum.
This is absolutely delicious.
We're going to grate a little bit more zest on top.
And then of course sprinkle a few extra cookies on top.
So why mess with perfection?
This ice cream is simply called Key Lime Pie.
Oh, this looks so good.
But I have to freeze him so he's going to have to go into the freezer for a minimum
of 4 hours and then he's ready to be tasted.
So this is my favorite part.
You finally get to taste your ice cream.
Go ahead and serve yourself a big scoop of your ice cream and enjoy as many flavors as
you like.
Oh yeah, baby.
You know what?
I am all about dairy-free coconut ice cream.
This is absolutely delicious.
I really hope you try it and I will see you back here every week for more Bigger Bolder
Baking.
