Hi Bold Bakers!
So I love when I see fried ice cream on a menu.
It has a lovely, sweet, crispy coating around the outside and then the cold vanilla ice
cream in the middle.
But guess what?
You do not need to deep fry the ice cream to create this delicious dessert.
And I'm going to show you my trick right now.
So let's get started.
First off, the recipe for this can be found on BiggerBolderBaking.com and if you're
new to my channel then welcome and make sure you tap that subscribe button so you don't
miss out on any upcoming videos.
Okay, so what is no-fry, fried ice cream?
Well basically what it is, we're going to create a lovely, sweet coating around the
outside of our ice cream so we actually don't have to deep fry it so you get the exact same
results.
I mean if you don't have to fry something then why would you?
So we're going to make this delicious little treat and you're just going to see how great
the results are.
The first thing we're going to do is we're going to start out on a tray and we're going
to scoop our ice cream just to make sure we can get it lovely and frozen before we coat
it.
So traditionally fried ice cream is vanilla ice cream but obviously you can use whatever
ice cream that you like.
Also you can use my two ingredient no machine ice cream and that will work really well too.
So I'm just going to get really big scoops, then just place it onto your tray lined with
parchment paper.
Do as many scoops as you like, you'll probably get six to eight portions out of these corn
flakes.
Okay, great, these are nice and big.
So now what we're going to do from here is pop these guys into the freezer for a minimum
of an hour because we want to get them really lovely and hard before we coat them.
So while the ice cream is in the freezer, we are going to create our coating.
Now my secret ingredient is corn flakes.
It gives you a lovely, crispy, crunchy coating on the outside, it works so well.
Now what I'm going to do is put this into a little food processor and we just want to
blend them up until you get kind of coarse breadcrumb like texture.
Now if you don't have a food processor, do not worry, put them into a Ziploc bag, get
a rolling pin and just bash them.
We're also going to add a little bit of cinnamon into the corn flakes because it's going to
give it lovely flavor and a little bit of warmth.
Once they're blended, this is the texture that we're going for.
There's some nice, fine bits in there but there's also some lumps.
Okay, lovely.
Now our next step is to heat this up with a little bit of butter.
So in a frying pan over medium heat, we're going to melt our butter.
Any kind of dessert with all this butter is going to be good.
So something to note about this recipe, you can use it all non-dairy and that will taste
really good too.
So into our melted butter, we're going to scatter over our corn flakes.
Then we're going to take a spatula and we're just going to cook our corn flakes a little
bit until they get nice and toasty and cooked with all the butter.
So just keep on stirring them as they cook.
Splash it down with a spatula just to make sure that your corn flakes get totally coated
in butter.
So I remember the first time I ever had fried ice cream, it was when I was living in Australia
and I was working in a mountain resort and we went to this Chinese restaurant and I had
fried ice cream.
Everybody else with me ordered it because I'd never had it before and I can still actually
taste it.
It was so good.
And I think it actually had cake crumbs on the outside.
It's delicious.
Don't walk away from your saucepan when you're doing this.
Just keep on stirring so it gets an even toast.
So this is looking lovely and toasted.
It took around 3-4 minutes over medium low heat and it's changed color.
This is perfect.
So I'm going to turn off the heat now and I'm going to add in a little bit of sugar.
This just gives extra sweetness.
Once you add it in, just give it a good stir around and then we're done.
So once you've removed it from the heat, just go ahead and sprinkle it onto a baking tray.
And then we're just going to let this sit here, cool down and then we're ready to coat
our ice cream.
Now if you don't have cornflakes, feel free to use any kind of cereal.
Like Rice Krispies would work really well.
If you also wanted to use maybe a chocolate cereal, that would taste great.
So don't worry, you can use whatever you have at home.
You would not believe how good this coating smells.
Oh, delicious.
Okay, so this has cooled down so now we're going to take out our pieces of ice cream
one by one and we're going to roll them.
So we're going to do this step kind of fast and all you want to do is just scoop up your
cornflakes around the side of the ice cream and just give it a nice push so they all stick
all the way around.
Can you see this?
It's already creating a crust.
Lovely.
It's getting nice and covered.
Any little holes, just shove some more cornflakes on there.
This is looking really good.
So now I really like this recipe when you think of things like birthday parties, even
sleepovers.
When you have some friends getting together and you're going to have lots of food and
nice things, this is a great recipe for that.
Working with ice cream can be a little bit temperamental so one thing you want to make
sure for this stage is that your ice cream is really frozen solid because it'll make
it so much easier to work with.
So once they're all rolled, we're going to pop them back into the freezer for around
another 20 minutes just to let them firm up even more.
Okay, so our fried ice cream is nice and frozen so now on Bigger Bolder Baking we love to
drizzle on stuff, sprinkle on things, make it really big and bold.
So I'm going to put some chocolate sauce over the top.
This will go really well with the vanilla ice cream.
And then, because I'm a big fan of whipped cream, we're going to pipe some whipped cream
on top.
This almost makes it look actually like a sundae.
Beautiful.
Okay.
And then the cherry on top is going to be the cherry on top.
Give it a lovely bit of color.
Oh look at that, how pretty is that?
So sweet.
And so simple to make too.
Okay, now I want to show you the crust and what it looks like on the inside.
Now my favorite part.
This is so good.
Oh, this definitely deserves a happy dance.
You definitely should try and make this.
It's summertime, you're on vacation, you have some extra time on your hands.
