Eating vegetables every day is essential for health. Vegetables provide vitamins, minerals, and other nutrients such as fiber and antioxidants.
This video introduces 15 special recipes with uncommon vegetables like artichoke, leeks, okra, and garlic. Let’s start with the first artichoke recipe, Artichokes with Tarragon Butter.
Ingredients:
Lemon, Artichoke, Tarragon, Butter, Salt
Procedure
Step 1:
Make a bowl of acidulated water: Fill a large bowl with cold water. Squeeze the juice of 2 lemons into a bowl along with the lemon halves.
Step 2:
Using a serrated knife, cut off 1/2 inch from the top of an artichoke. Remove any small leaves from the bottom. Use kitchen shears to trim the sharp tips of artichoke leaves. Transfer to acidulated water, and repeat with remaining artichokes.
Step 3:
Fill a large pot with about 2 inches of water and add tarragon and a pinch of salt. Set a steamer basket in a pot, ensuring water doesn't seep through holes. Bring to a boil, then reduce to a rapid simmer.
Step 4:
Place artichokes stem side up in a steamer and season with salt. Cover the pot and steam until the bottoms of the artichokes are very tender when pierced to the center with the tip of a paring knife, about 40 minutes. (Add more hot water if necessary to maintain level during cooking.)
Step 5:
To make the tarragon butter: Melt butter in a small saucepan over low heat, stir in chopped tarragon and lemon juice, and season with salt.
Step 6:
Place an artichoke on each plate, remove the center leaves, and gently scrape down to the heart with a spoon. Serve with lemon wedges and warm tarragon butter on the side for dipping.
