Bina is a force of nature at 91 years old. We had a great afternoon with her and her family in the Siena countryside. In this video, she prepares tagliatini with cannellini beans, just as she has done for decades and we were lucky enough to chat to her the next day to wish her happy birthday - she is now officially 92.

I'm Bina. I'm 91 years old and I enjoy making sfoglia and tagliatini with beans.
She shares her recipe for tagliatini with beans. Please support our work by becoming

Like a lot of cooks her age, Bina keeps her dedicated pasta board in its own cloth bag.
Her granddaughter Alice and her friends have dropped by to watch the filming.
Bina puts half a kilo of 00 flour into a bowl and cracks in three eggs.
She adds a tablespoon of olive oil and a generous pinch of salt.
She forms a dough and kneads it.
Slapping helps to develop the gluten as does
kneading and turning it 33 times, the age of Jesus.
Bina enjoys teasing Andrea.
For her, making pasta is a way of using up eggs.
Bina rolls out her dough. When it's too large for her board,
she moves it to her tablecloth.
It's ready when you can see the pattern through it.
The sfoglia, or pasta sheet, has to dry a little and we take a quick walk around the garden.
Bina enjoys being the star.
Bina pours a little oil into a saucepan and adds a whole garlic clove.
Cooking for herself, Bina uses a jar of beans rather than starting with dried ones.
She tips them in along with the liquor and squeezes in some tomato puree for colour.
And she lets this mixture reduce a little.
Bina then adds water in which to cook the tagliatini.
And half a stock cube for extra flavour.
The pasta is ready for slicing.
Tagliatini are slightly thinner tagliatelle, but nobody is measuring.
Bina is using a knife her husband made from a scythe.
Bina fluffs her ribbons to stop them from sticking.
She
heaps a handful into the beans. They only need a few minutes cooking.
Beans stick easily, so I'm in charge of stirring.
The result is lovely and creamy.
Our lovely Bina has made this and is making a lot of fun of me,
so I'm going to make this very quick indeed.
Pasta with beans is one of my favourite combinations.
Wonderful dish. Simple, fast. She used a tin, not a tin, a jar of beans because she lives on her
own. It's not worth doing lots of beans. And that works perfectly for this dish.
Absolutely delicious. Creamy, savoury and good for you.
