
Annina Makes Spiral-Shaped Pasta from Apulia Called Sagne Torte!
We’re in Tuglie with 82-year-old Annina, who welcomed us into the cellar of her home. Many years ago, she created a Nativity scene there for Christmas — it was such a hit that she made it permanent. Since then, the cellar has become a beloved gathering place for dinners and celebrations.
Over time, the Nativity inspired Anna and her family to build even more scenes and welcome visitors into their unique and heartwarming space. Her daughter Antonella and son-in-law Ottavio now help keep the tradition alive.
But today, Anna takes center stage as she prepares a local favorite: sagne torte with pork ribs. Here’s the recipe:
For the pasta
300 g semola rimacinata (durum wheat flour)
120–140 ml water
For the sauce
600–700 g pork ribs
700 ml tomato passata
1 large onion
3–4 tablespoons olive oil
A handful of basil leaves
Salt, to taste
