Russian Holodets is a cold meat jelly, traditionally made for the holiday table. This Russian Holodets recipe is made with chicken meat. Holodets is eaten cold out of the refrigerator, and spread with horseradish or mustard. This dish’s name “holodets” is from the Russian word “holod” means “cold”. It’s very simple to cook and so delicious!
Hello everyone and welcome to Alice's yummy food.
Today I'm making jellied chicken.
It's so good, in Russian it's called
холодец and it's just one of those dishes
that we have every single time on big celebrations,
New Year's, Easter, birthdays, it's a must on the dining table.
So don't say you don't like it before
you've actually tried it and made it.
It's really easy to make, it tastes really delicious and I
know it's just something I grew up
with and I'm sure everyone who grew up in
Soviet Union times will appreciate this dish
so let's get started we're going to
need a bit of gelatin onion fresh
parsley carrots peppercorns salt garlic
bay leaves and I'm using 1 kilo of chicken drumsticks and thighs take a
deep pan and fill it with 2 liters of water
and add your chicken in there and
we're gonna cook it slowly for about 2 hours chop
your onion roughly just into
few cuts just like that cut your carrots
into discs add everything into your pot
your onions bay leaves peppercorns garlic
and carrots while it's cooking
you need to get rid of all the scum
so just take a bowl and place it in here
and get rid of all the white stuff you can see
the chicken has reduced nearly
by half so we're gonna stop cooking
that now we're gonna sieve everything through
we're going to keep all the mixture just
pour that in I'm gonna place chicken
onto a plate and let it cool down separate
your chicken from the bones and
skin so just take it off place it
into a different bowl I like to put carrots
into my jellied meat
so I'm just gonna cut them into smaller pieces just into
quarters just like that so for jellied meat
and you can use any kind of cups
trays I'm going to be using something like
this it's small and it's like one
portion so we're gonna do them separately I don't know how many it's
gonna be maybe few and but you can use
a big tray you can use a big baking tray
whatever you have in your kitchen will do.
I'm going to add two teaspoons of
gelatin into hot water.
I'm just gonna make sure it's all dissolved. Into each
dish place a bit of carrot.
Then we're going to add our chicken. You need to
press inside.
Then we're going to add minced garlic on top of each chicken.
Just spread it around.
Finally take your mixture and pour into each bowl until
it's full. We're going to place our kholodets
or chicken jellied meat into the
fridge until they're completely set
but it's best if you leave them overnight I
have just taken my kholodets out of the fridge
and you can see it's all nice and
set what we're gonna do now run
a knife around the edges just to loosen it
