Mirror glazes can be used to cover the top and the sides of modern cakes, mousse cake or tortes. Covering a cake with a shiny glaze makes it instantaneously chic, professional-looking and also provides the “wow effect“! As you can see above, there is indeed a reason if it’s called “mirror glaze“. And yet it’s so simple to make! Glazing properly, though, takes a bit of practice and a quick movement. Enjoy my step by step video on how to make this beautiful mirror glaze. This is a nice technique to have in your trick bag for those times when you want to add a little glitz and glamor to a cake, torte or bombe. It’s a soft coating, but the trick of added gelatin gives it a shine other simple chocolate glazes don’t have.
Welcome to Alice's Yummy Food.
Today I'll show you how to make this insane mirror glaze.
It's so popular, it's the thing that I've
been obsessing over for the last two weeks.
And if you've seen on my social media,
yesterday I posted this incredible picture of this amazing
cake that I made with beautiful mirror glaze.
I'll show you today how to make it, the full
recipe, all the ingredients will be listed down below
in my description box. Now let's
get started.
We are going to need white chocolate, cold water,
condensed milk, caster sugar, gelatine,
glucose syrup and different food colouring depending
on what kind of glaze you want to
make.
The first thing you want to do is get your gelatine ready,
so I am using 1 sachet or
12 grams.
Then add cold water and leave it to set.
Take a jug where you will be making your glaze
and add your white chocolate in there.
Then add condensed milk.
In a small saucepan add your sugar, water,
glucose syrup and cook until it just starts
to boil.
Our gelatin has set
so we're just going to add this into our hot glucose mixture and
mix that in.
Once your gelatin has dissolved we're going
to add it into our chocolate and condensed
milk mixture and leave it for a few minutes.
Add few drops of your food colouring,
take your hand blender and pulse few times at about
90 degree angle so that doesn't create any bubbles
in the mixture. If you have
any bubbles get rid of the bubbles because we don't want that in our
coating. So I'm gonna wrap this in cling film
and leave it in a fridge overnight.
The glaze is ready we're gonna take off the cling film.
To use the glaze we need
to reheat it to 35 degrees Celsius
so you can either do it in the microwave or
over the double boiler.
Make sure your cake is completely frozen and very cold
otherwise the glaze is not gonna work.
When the cake stops dripping we're going
to take off the bits at the
end just to smooth it over.
Once it stopped dripping
we're gonna glaze it again.
I also want to add another color so I'm just gonna
add a little bit on one side
and this is how you do a double mirror glaze.
