Today on SausageRoo, I’m making a homemade version of the traditional Maracaju Sausage, a specialty from Maracaju, in the state of Mato Grosso do Sul, Brazil.
This sausage is very different from most common recipes: it’s made entirely with beef and beef fat, the meat is finely chopped by hand instead of minced, it uses fresh Seville orange juice, and traditionally it’s stuffed into one large spiral.
For this recipe, I used picanha, rump, and fresh beef fat. After preparing and stuffing the sausage, I let the spiral rest in the fridge before cooking it slowly on my gas Weber until it was nicely browned on the outside, juicy on the inside, and perfectly cooked.
