For 50 years, my grandfather’s homemade sausage recipe was hidden inside an old family Bible that nobody in the house was allowed to touch.

Today, Hank brings that forgotten family recipe back to life. Starting with pork shoulder and traditional spices, he makes the sausages from scratch using the same old-fashioned techniques his grandparents used generations ago.

But Hank also gives the recipe a little modern twist. The sausages are gently cooked in beer with onion and herbs before being finished over an open fire until the casings are golden, smoky and crisp. Served with grilled cabbage, homemade apple and onion relish, toasted bread and a honey-beer mustard, it turns an old family recipe into a complete meal cooked outdoors.
