This creamy apple and pear cake is soooo delicious! Creamy layers of soft apples, pears, vanilla custard cream topped with crunchy buttery almond crust. You will want to make this again and again! It is really easy to make, it tastes like a mix between apple pie, with custard and nutty crumble.
It is insanely good! If you are a fan of creamy, desserts and you have some apples or pears lying around - You must make this! This cake isn't too sweet, but you can add more sugar if you want :) You can serve this with ice cream or cream, but it's amazing on its own as well.

In a bowl add your eggs
then add your sugar
and vanilla extract,
a little bit of salt and we're
gonna whisk everything together until it puffs up
and becomes nice and white and pale. The mixture
should almost double in size.
You want the eggs to be nice and fluffy.
Next you want to add your milk
and unsalted melted butter.
Melt the butter in advance so it's not hot and then whisk everything
one more time. Next you're going to add
your sifted white flour together with baking soda
and then gently mix everything together with your spatula at first
and then I switch to the whisk to
make sure there are no lumps of the plain flour.
Once everything is done you can set this aside
while you prepare your fruits. So here I've got my apples and pears.
You can use only pears or only
apples it's completely up to you you want to peel
and chop them and i'm using this food processor
uh it's a slicing option which makes your life
so much easier i just drop them all in and it
slices for me if you don't have that just use your normal knife
and slice your apples and pears as
thin as possible something like this next we're going
to drop all our apples and pears into our
delicious creamy mixture
and you want to mix everything together so all your fruits are
covered in this creamy sauce once it's all mixed
in you can take your baking dish you can bake this
in a round tin in a square tin whatever tin you have i actually used
my silicone mold but i think
it's better to use something um more sturdy
so if you've got like a banana bread tin that's you know
made out of metal rather than silicone it will be better
so then add a bit of oil you can also
use butter parchment paper
and then add your mixture inside you can add the apples first and
then add the sauce the mixture
or you can just put everything in there like i did you do want
to smooth it out as much as possible
so just go around the edges press around and just make sure
it's nice and even bake your apple pear fluffy pie cake
in the oven for about 30 minutes at 180
degrees celsius or 350 fahrenheit
while our pie is baking we're gonna make the topping so add
unsalted butter a couple of cookies you can use any cookies
that you like i'm using just normal
digestives and then almonds you can replace the nuts
although i have tested with other nuts and
prefer the almonds sugar
and we're gonna blitz everything together until it's nice and crumbly
you will see the mixture will become just like
so this topping is to die for trust me after 30
minutes gently take your cake out you will see
that the apples have already cooked and the
mixture is nice and soft
but it's not ready yet we're gonna top it up with our crumble nutty
crumble and just evenly divide the crumble around your cake.
I'm just using a spoon and then gently
putting it all over the cake
and then using my spoon I'm pressing inside my mold. And now our
cake goes back into the oven for about 20 more minutes.
So in total we're going to be baking this
for about 50 minutes. So once it's done it's going to look like this.
Your house is going to smell
amazing i promise you um you want to leave it
in your mold for about 15 minutes before you start
taking this out i even left mine for a bit longer
because it's such a delicate dish such a delicate
cake uh you want to be very nice
and gentle with it flip it over take off your parchment paper and
then flip it over again onto your presentation board
or a dish um and yes you might want to
leave it for a little bit longer to set
and cool down before cutting into it as it's warm it's
gonna fall apart so the longer time it has
to cool down the more sturdy will be but once you cut
inside you can see how creamy it is it has
no cream inside yet it tastes so soft so creamy
you have the crunchiness from the nuts
and all the flavors work together so well honestly guys
it's such an easy recipe and so delicious. I hope you enjoy it.
